Savory Cheddar Zucchini Muffins

That zucchini does not have a whole lot of flavor on its own. This is a very good savory muffin with a lot of room for a flavor profile to be added. What I really appreciate is that this a savory muffin that turns out moist. Thank you for a good base recipe that allows for some experimentation.

Homemade Refrigerator Pickles

This is a great basic recipe and so much can be added to it to please anyone's taste. Beware of adding garlic due to the acidic content. You can either use already pickled garlic or add some turmeric to disguise the discoloration. For those of you with problems in processing these pickles for canning; both shrinkage and no-crisp. This is NOT a recipe to be used for canning. To can you need to adjust your liquid to contain more acid for crispness and when you "cook" (canning does cook them) they will reduce as the natural water evaporates into the canning liquid. Please use a recipe specifically designed for canning.

Port Wine Jelly

I have made many kinds of wine jelly and using port is a wonderful full-flavored version. It is sweet - DO NOT cut back on the sugar as this is the chemistry between sugar and pectin that makes it jell. Try adding a little lemon juice instead. Strangely I have found that the cheaper the wine .... the nicer the jelly. When adding lemon juice substitue 1/2 cup for the wine.

Perfect Sushi Rice

Great recipe! My daughter used this as a 4-H Fair entry and won Grand Champion. Only addition/change she made was to use Sesame Oil for the vegetable oil. We even have a local restaurant changing their rice recipe with the sesame oil. YUM!

Best Guacamole

This is a good basic recipe. As with ALL recipes you have to suit to taste. Those of you who thought it did not make enough did you buy the Haas avocados as suggested in the recipe as they have a stronger taste and are much larger.

Mini Cheesecakes II

Easy and delicious. Made these for a High Tea at our church and made many new friends!! Changes: crushed cookies in blender and placed crumbs in foil lined cups. Melted dark chocolate and topped little wonders. I think the chocolate made the friends!

Captain Crunch Chicken

Have a similar recipe I made from Planet Hollywood version. Add 1/2 cornflakes and 1/2 C-Crunch and a flour & egg wash before is a must!! Place on wire racks in baking pan to bake. P.S. Don't try with Berry Crunch - terrible color. Peanut Butter Crunch isn't too bad!! We serve with a hot bleu cheese dip.

Rich and Creamy Roasted Eggplant Soup

For those who love garlic - this is for you!! YUM! Added a little rosemary and some cubed chicken for "girls night in" and substituted evap. milk for cream. Success! Thanks for the recipe.

Mediterranean Chicken with Eggplant

This was a great recipe for eggplant. I wanted something different and this worked beautifully. I have also added a package of bernaise sauce which was wonderful. Leftovers can be pureed for a delightful creamy soup!

Mimi's Zucchini Pie

I had way too much produce this year. Thought I would get rid of it at a church pot luck with this recipe. Did I ever!! Wasn't any left when I got up there and had to make another to see how it tasted. This was delicious. Added garlic (because I love it) and was very nice looking for presentation. Will keep this one handy. Have used different summer squashes too!

Greek Grilled Cheese

SUPER! These are so yummy. Daughter doesn't like onion so I added garlic to her's instead. Served with kalamata olives and Avgolemono soup. What a treat! Daughter added olives to her sandwich. Thanks! Great on french bread bruschetta!!

Beer Pancakes

Okay - don't like it with the beer. Even tried it topped with cheese. But add Cream Soda to it - WOW! Now I use soda for the liquid with all my pancakes; even a mix recipe. Makes it very light and fluffy. Great idea! Diet soda works too.

Used venison. Not a bad flavor, but using all of the suggestions posted by other viewers - it became a whole new recipe. Very "soupy". Stick with the Reviewer's Stroganoff Recipe.

Mint Chicken

This was a pleasant experience all the way around. The taste was fresh and delightful and the recipe so easy to do my daughter has re-created it several times to impress her friends. Try it with a lemon/herb rice and sesame green beans. Letting the chicken "steam" in the pan gives it a nice texture.
