This being my first attempt at sugar cookies, which admittedly are the last I reach for in anyone else's house, I did not have high hopes. I liked the idea of soft cookies and read the first 10 pages of reviews. Here are the changes I made: Added 1/2 teaspoon of almond extract, 2 teaspoons cinnamon, 3/4 cup brown sugar and 3/4 white, no salt. I was making them a full day ahead of time so I didn't even wait for them to get brown on the bottoms before I took them out. About 8 to 10 min per batch. I was using a snowflake cookie cutter and quickly learned to keep the dough for those very thick - 1/2 inch - and have lots of flour on my working surface. I made fork impressions and sprinkled colored sugar on them. It was a nice alternative to the other gooey/rich desserts I made for Christmas. And also very good to have with tea, even 2 days post-baking, they are still soft and yummy.
