Cajun Pasta Fresca

This is delicious! I did use a big can (28 oz) of petite diced tomatoes instead of fresh tomatoes, and angel hair instead of vermicelli. Also, since I was using canned tomatoes, I only sprinkled a little salt, instead of the 1 Tablespoon called for. I topped with sliced blackened chicken (recipe from this site), and my husband and son loved it...couldn't believe it was all low fat. The only change I would make in the future is to put in less pasta, and to use whole wheat pasta. I used 16 oz pasta.....would probably use 8-10 oz. instead next time. Delicious! Will definitely make again. By the way, the cajun seasoning I used was "Slap Ya Mama" from Ville Platte, Louisiana. I have found it here in the Gulf Coast of Texas, and saw it on vacation once in Destin, Florida (slapyamama.com). I like it because it's not as salty as some other popular brands of cajun seasoning.

Baby BLT

I have made this twice now, and both times they were the first thing eaten off the buffet table and I got requests for the receipe. Per other reviews, here's what I do: Instead of 1/2 cup mayo...I use 1/4 cup mayo and 1/4 cup cream cheese. Also, I buy the bacon in the bag that's already cooked and chopped. Take the tomatoes and cut the top off...not the end where the stem was. That way, they will sit on the plate without rolling. I cut off the top and scoop out the insides and then turn over on a paper plate with a paper towel on it and let them drain while I put the rest of the stuff together. I put the stuffing in a zip lock bag and cut a hole in the corner and that way it's easier to stuff the tomatoes. Yum!!

Terry's Texas Pinto Beans

This is a good, low-fat recipe for beans. I followed the recipe, except I did soak my beans over night, and I did add a lot of water. I gave 4 stars instead of 5 because we just prefer our beans cooked with meat (sausage, bacon or ham bone..not so low-fat!).

Party Pinwheels

These were delicious! The only change I made was instead of using celery, I used some yellow bell pepper. I also used diced black olives rather than sliced. I spread the mixture on sun dried tomato tortillas and spinach tortillas. My guests loved these. The flavor was great - not too salty to me once it was all mixed together and spread on the tortillas. And all the crunch inside was very good. Will save this in my recipe box to make again and again.

Make Ahead Manicotti

I love spinach, but my son and husband do not, so I made half with spinach, and half with ground beef. I cooked a pound of ground beef. When I made the filling, I split it in half. I put in half the cooked beef in one half of the filling, and put in half the spinach called for in the recipe in the other half. I put the remainder of the cooked beef in the sauce. I used more cheese than called for in the recipe, and also used 2 jars of sauce as others had suggested. To fill the tubes, I put the fillings in the plastic bags, which worked well - be sure to cut only a small hole in the corner. I enjoyed making this in the morning, then only having to pop it in the oven in the evening. Served with a green salad and garlic bread. Yum!

King Ranch Chicken Casserole III

Delicious! Family loved it. Will make again soon. Only thing I did differently was to tear the tortillas into about 5 or 6 pieces. Also, I split the recipe between 2 8X8 dishes, refrigerated over night, and cooked one the next day for dinner, and took the other one to my parents. They loved it too. Easy recipe.

Fruited Ice Cream

Yummy! Followed the recipe exactly, using fresh strawberries, and it turned out perfect. I did mix it all up in the blender, then poured in the ice cream freezer. Delicious - Thanks for the recipe!

Southwestern Lasagna

I made this to take to a Mexican Dinner Night with friends. This was very good - easy to make, and there were no left-overs. The only thing I did that was different from the recipe was using shredded instead of sliced monterey jack cheese, and I used a little more than was called for. Will make again.

Raspberry White Chocolate Mousse

Made this for a girls night out pool party at my house. It was delicious. I put it in champagne flutes, and topped with the sauce and mint leaves. Looked really good, and tasted even better. Everyone loved it. It was a pain to strain the raspberry sauce without a cheesecloth. I will be purchasing a cheesecloth before I make this again.

Asian Lettuce Wraps

I made these to take to a get-together with friends. It was easy and turned out perfect - everyone really liked them. I used iceburg lettuce for crispness as others have suggested. Instead of pickled ginger, I used fresh ginger. Also, I added more of each liquid, because it seemed so dry. I used ground turkey - everyone said they thought it was ground beef. Even my husband liked them - and he is a very picky eater. Will make again - SOON!
