Luscious Lemon Cake

This cake was delicious and very moist. I used the Baker's Joy, and I let the cake sit for an hour before turning onto a plate. Had no problems with it coming out. I followed the recipe exactly, except I was lazy and did not sift the powdered sugar, and I don't think it made any difference. Will definitely make again.

Biscuit Pizza Bake

Very easy recipe. My husband and son loved this. I did add a little garlic and some flaked red pepper to the meat to spice it up a bit.

Tomato and Mozzarella Bites

These were easy and good. I think they would have been better if I had used better mozerella. Two halves of cherry tomatoes were a lot for one bite. Good idea though. Next time will only put one half of tomato and use better mozerella.

Party Pinwheels

These were delicious! The only change I made was instead of using celery, I used some yellow bell pepper. I also used diced black olives rather than sliced. I spread the mixture on sun dried tomato tortillas and spinach tortillas. My guests loved these. The flavor was great - not too salty to me once it was all mixed together and spread on the tortillas. And all the crunch inside was very good. Will save this in my recipe box to make again and again.

Jalapeno Popper Spread

This dip was delicious and got rave reviews by everyone at the party where I served it. I tend to like things spicy, so I used close to 4 oz. of the canned jalepenos, rather than the 2 oz. that this recipe called for. I mixed the ingredients with a hand mixer, which was easy and made it fluffy. I used about half the amount of parmesan that was called for, and I sprinkled the top with some chopped fresh jalepenos. I baked in the oven until it was hot through, and then turned on the broiler for just a minute or two to brown the top. It was wonderful! Will definitely make again.

Make Ahead Manicotti

I love spinach, but my son and husband do not, so I made half with spinach, and half with ground beef. I cooked a pound of ground beef. When I made the filling, I split it in half. I put in half the cooked beef in one half of the filling, and put in half the spinach called for in the recipe in the other half. I put the remainder of the cooked beef in the sauce. I used more cheese than called for in the recipe, and also used 2 jars of sauce as others had suggested. To fill the tubes, I put the fillings in the plastic bags, which worked well - be sure to cut only a small hole in the corner. I enjoyed making this in the morning, then only having to pop it in the oven in the evening. Served with a green salad and garlic bread. Yum!

Fruited Ice Cream

Yummy! Followed the recipe exactly, using fresh strawberries, and it turned out perfect. I did mix it all up in the blender, then poured in the ice cream freezer. Delicious - Thanks for the recipe!

Southwestern Lasagna

I made this to take to a Mexican Dinner Night with friends. This was very good - easy to make, and there were no left-overs. The only thing I did that was different from the recipe was using shredded instead of sliced monterey jack cheese, and I used a little more than was called for. Will make again.

Asian Lettuce Wraps

I made these to take to a get-together with friends. It was easy and turned out perfect - everyone really liked them. I used iceburg lettuce for crispness as others have suggested. Instead of pickled ginger, I used fresh ginger. Also, I added more of each liquid, because it seemed so dry. I used ground turkey - everyone said they thought it was ground beef. Even my husband liked them - and he is a very picky eater. Will make again - SOON!
