Chicken Cordon Bleu II

Reviewed: May 21, 2008
I made this per the recipe, and it was delicious. My husband and son, both picky eaters, love it. I admit, I thought it would be time consuming to make, but it really wasn't. Will make again.

Veggie Pizza

Reviewed: May 5, 2008
This is good. Just make as directed and put whatever veggies on top you want. I used chopped carrot, broccoli, cauliflower, red pepper, orange pepper, and yellow pepper. I chopped each up in tiny pieces. Delicious!

Raspberry White Chocolate Mousse

Reviewed: May 5, 2008
Made this for a girls night out pool party at my house. It was delicious. I put it in champagne flutes, and topped with the sauce and mint leaves. Looked really good, and tasted even better. Everyone loved it. It was a pain to strain the raspberry sauce without a cheesecloth. I will be purchasing a cheesecloth before I make this again.

Shrimp Lemon Pepper Linguini

Reviewed: May 5, 2008
This was wonderful! My husband and son, both picky eaters, loved this! I will be making this again. If I were to do anything different, I would use maybe 1-1/2 to 2 lbs of shrimp...we love shrimp. Maybe a bit more sauce too. But it was delicious!

Dirty Martini Cheese Spread

Reviewed: May 1, 2008
This would have been good without the vodka. I put in only half of what the recipe called for and made it the day prior to my party, but it was still very strong.

Blackened Chicken

Reviewed: Mar. 17, 2008
We loved this! My chicken came packaged as 3 breasts. So I doubled the spice mix, and it was perfect. I cooked in my pre-heated cast iron skillet (only pre-heated it about 5-7 minutes), used olive oil, and cooked about 5-9 minutes each side, depending on the size of the breast - they weren't all the same size. I did not cook them in the oven at all. They were delicious. My husband and son loved them, and I will be making them again. I served them over the Cajun Pasta Fresca recipe on this site.

Cajun Pasta Fresca

Reviewed: Mar. 17, 2008
This is delicious! I did use a big can (28 oz) of petite diced tomatoes instead of fresh tomatoes, and angel hair instead of vermicelli. Also, since I was using canned tomatoes, I only sprinkled a little salt, instead of the 1 Tablespoon called for. I topped with sliced blackened chicken (recipe from this site), and my husband and son loved it...couldn't believe it was all low fat. The only change I would make in the future is to put in less pasta, and to use whole wheat pasta. I used 16 oz pasta.....would probably use 8-10 oz. instead next time. Delicious! Will definitely make again. By the way, the cajun seasoning I used was "Slap Ya Mama" from Ville Platte, Louisiana. I have found it here in the Gulf Coast of Texas, and saw it on vacation once in Destin, Florida (slapyamama.com). I like it because it's not as salty as some other popular brands of cajun seasoning.

Festive Olive Cheese Ball

Reviewed: Mar. 11, 2008
I liked this ok, but evidently my guests did not because hardly anyone ate it. I think I would make it again and leave out the garlic powder.

Excellent! Easy to make and delicious. Made for a family party and everyone loved them. I did put in a little more cayenne than called for. Will make again.

Terry's Texas Pinto Beans

Reviewed: Mar. 11, 2008
This is a good, low-fat recipe for beans. I followed the recipe, except I did soak my beans over night, and I did add a lot of water. I gave 4 stars instead of 5 because we just prefer our beans cooked with meat (sausage, bacon or ham bone..not so low-fat!).

Camper's Breakfast Hash

Reviewed: Dec. 22, 2007
I used ground breakfast sausage for this instead of the links the recipe called for. This was very good...even still good left over the next few days. I did only use one package of the shredded potatoes instead of two, and felt it was plenty.

Baked Pork Chops I

Reviewed: Dec. 22, 2007
We loved this recipe. I did double the sauce recipe as others had suggested, but felt like it was really too much sauce and ended up throwing some out (more sauce than meat). May have been because the package of pork chops I bought only had 4 (large) chops in it. But the flavors were very good, and I will definitely make it again.

This was just ok. I felt there was too much pasta compared to the tomatoes. I probably won't make again.

Chicken Noodle Casserole

My husband and son loved this, but I didn't think it was all that special. Especially since it took a while to put together and dirtied a lot a pans.

Twice-Baked New Potatoes

Reviewed: Dec. 22, 2007
I made these for my immediate family last night at dinner and we all loved them. They were delicious! I made exactly as the recipe stated, and they turned out great. I plan to double the recipe and make them for a large group for Christmas dinner. Thanks for a great recipe!

This was ok. I just didn't care for the spicy flavor with the sweet potatoes.
