Crustless Cranberry Pie

Made as written. Twice. Want to try as mini muffins. Want to try with other berries. Great as a dessert with vanilla ice cream or whipped cream. Great as coffee cake in the morning. My new favorite recipe!

Sardines with Sun-Dried Tomato and Capers

This is going in my easy, healthy dinners for seniors who live alone file. I love to cook but for just me, not so much. I hear my friends say they don' eat very well home alone - no incentive to dirty pots and pans etc. Used Sardines canned in water. Added everything except the pepper flakes, added some diced red onion, and topped it off with a splash of my favorite olive oil. Ate it with Triscuits. Such a tasty, simple way to get my Omega 3's. Will also serve as an appetizer. Thanks for the recipe.

Cucumber Slices With Dill

Very nice. Used 1 large English cucumber. 1/2 cup sugar, no salt and everything else the same. Added a handful of grape tomatoes cut in half for some color. Made four days ago and finishing up just now. Keeps getting better and better....

Norris' Sesame Pasta Salad

I'm eating this salad on day two and it is even better than day one. Used spaghetti, 1/4 cup sesame oil, 1 tsp red pepper flakes, threw in a few more peanuts and added 3 cups cubed poached chicken breast, 1 cup snow peas and 1 cup shredded carrots. (Drained the spaghetti on top of the peas and carrots in a colander to blanch them.) Served as a meal in a bowl! This recipes lends itself to all kinds of additions. It also makes a ton! Will cut in half next time I make it - unless I'm feeding an army! Thanks for the recipe!

Whipped Cream Cream Cheese Frosting

Oh my goodness! oh my goodness! This is one of the best recipes I've found on this site. My mother turns 95 tomorrow and when I asked her what she wanted for her birthday dinner, she said, "I don't care as long as you make that cake again with that frosting." She is raving all over her assisted living facility about her daughter's (me) fabulous cake - Betty Crocker Devil's Food boxed cake mix! I think you could smear this frosting on cardboard and it would be awesome! Followed the hints - put my bowl and beaters in the freezer for a few hours before whipping the cream. I used the entire one pint carton (can't waste this good stuff) and didn't change the other proportions. The whipping cream stiffened up nicely in about 6 minutes. Brought the cream cheese to room temp. Just frosted a two-layer 9 inch cake -really the cake is just an excuse for this frosting. It's in the fridge and will serve tomorrow. Have done it ahead like this before and the cake stays moist and the frosting just keeps getting better and better. Thanks so much for this recipe. It's becoming my claim to fame :-)

Simple Beef Pot Roast

Really Good. Prepared pretty much per recipe and baked 2-1/2 hours. Added 3 cloves garlic and 1/2 tsp dried thyme to vegetables. Will double vegetables next time. Can't have too much of this delicious vegetable "mash" as a topping. Served over horseradish mashed potatoes as a one dish meal. Easy and as it was baking it smelled so good - all over the neighborhood :-)

Cheesy Ham and Hash Brown Casserole

Guess I'm in the "I may get kicked to the curb" group. Easy, yes. Versatile, yes. Too rich, yes. Followed the directions exactly and added mushrooms and green onions. It needs a lot more veggies, in my opinion, to make it tastier and healthier. Always surprised when there are so many raving reviews and I have a different response. Probably a good thing I'm not in the restaurant business....

Key Lime Pie VII

Ok. Coming very late to this party. Made exactly as directed with the addition of homemade whip cream spread on top. Got down on my hands and knees to watch for the elusive pinhole bubbles ( I have a very low oven). They appeared at exactly 5 minutes 13 seconds. Removed from oven at that point. Not too sweet. Not too tart. Just right. In my opinion.

Easy Polenta with Tomato Sauce

So EASY and so GOOD! I serve this (without tomato sauce) with Braised Beef Short Ribs or Braised Lambshanks. The gravy from the meat is perfect over the polenta and they go together so well.

Sausage, Peppers, Onions, and Potato Bake

Great recipe. Store was out of Italian sausage so I used Garlic/Basil. (Close enough?). Not huge fan of green peppers so substituted whole mushrooms. Yes, my oven requires 40 minutes. Also no white wine on hand so used extra chicken broth. Very forgiving recipe. Thanks!

Brazilian Fish Stew

Very Nice. Suggestions optional: Triple lime juice adding half at end; don't fret if you don't have peppers; Use red, white and green onions for color; add some curry if you like curry; try Cod; don't do what I did - used lite coconut milk. next time will go full boar and use the regular coconut milk; finally, invite someone over for a delicious meal.

Healthy Garden Salad

You can't mess this up! Just made it and don't know if I can wait 2 hours to eat it! Used white wine vinegar (out of red), olive oil, garbanzo beans (no edamame in the house), and didn't cook the frozen corn - so NO cooking on this very hot day! Think the lime juice makes it. But honestly all kinds of substitutions from vinegar to oil to beans probably will work. Going to serve it over lettuce with avocado slices on the side. Add baguette rounds toasted with olive oil and salt and pepper and dinner is served!

Slow Cooker Cassoulet

Ok. Made this tonight. Would rate 4.5 stars if that were an option. Changes: Used chicken thighs instead of breasts - whole - because that's what we like. Used 1 tsp thyme instead of parsley. Added 1 cup chicken broth (no wine) in anticipation of all the wonderful juices to dip toasted rustic bread into. Cooked 7 hours. Perfect! Will make again - easy and comforting and adaptable to individual tastes.

Sometimes I don't understand the ratings on this site at all. This recipe is a case in point. Agree with the reviewer who said he didn't like the taste or texture of the ground pork. Simple vegetarian Ratatouille is much better. Call this something else.

Pumpkin Stew

Spare the poor pumkin! Added so many things to this stew to try and give it some flavor that it no longer had any relationship to this recipe. Cooked the pumpkin exactly as directed. The bottom split open and some of the stew leaked out preventing any thought of moving the ensemble to an attractive serving dish. The pumpkin looked pretty however. Will try again cooking the pumpkin empty for a shorter time and than filling it with something else - possibly pumpkin soup or mashed sweet potatoes. Or maybe I'll forget it all together!
