I cannot wait to retire and spend my days indulged in hobbies. I am a beginner cook so I choose recipes that are hard to screw up. I am looking for basic recipes that are good as is and can be expanded upon when I’m ready to experiment more.

Baked Garlic Parmesan Chicken
The chicken was very tender and moist. Tips: Heat up the oil and garlic in the microwave for 20 sec to really bring out the garlic flavor. For faster cooking, bake at 375 then hike up the temp to 400 to finish it off. Saved me 10 min for 2 breasts.

Chicken Pot Pies with Puff Pastry
Boy was I impressed with myself on this one! The swiss tasted delish. I used a veggie bouillon cube instead of the spices to flavor the broth. To save time I used 1 can of mixed vegetables and next time I'll make the extra effort and use fresh. I felt like a real cook when that awesomely browned and puffy pastry top came out of the oven!

Teena's Spicy Pesto Chicken and Pasta
Wanted to add... I didn't have time to read through the reviews, only the 3 most popular at the bottom. Came out excellent! I added the suggested sun-dried tomatoes (which I enjoy) and I went lightly on the parmesan (which I don't like excessively). What an easy and delicious dish that can be adapted many different ways! Try it! I'm not even a huge pesto fan and I thought it was TASTY!
