Slow-Cooker Chicken Tortilla Soup

Yum! I've made this recipe with breasts and boneless thighs - both are great. I toss them into the pot, uncooked, with everything else and shred the chicken at the end. I also use all chicken broth instead of water.

Bacon-Roasted Chicken with Potatoes

Well I liked it, but my hubby didn't because the skin didn't get crispy under the bacon. He says it's a texture thing -- doesn't like slimy chicken skin. So I might try this again with skinless chicken. I put bacon only on top instead of wrapping it around the chicken to avoid slimy bacon.

Good! I took the advice of others and added diced potatos, garlic, oregano, & bay leaf -- glad I did. I also used chicken broth because that's what I had on hand.

Chocolate Chip Orange Zucchini Bread

Pretty good! I used applesauce for 1/2 the oil, a little more zucchini, and orange extract instead of zest (didn't have any on hand). Baked for 55 min. in a silicone bread pan.

Chewy Coconut Cookies

Delicious! I added a little more vanilla and refrigerated the dough for 1 hour prior to baking. My cookies took 12 minutes.
