Italian Style Meatloaf I
This is very silmilar to mine with a few tweaks. I use a meatloaf mixture for the meat, homemade or jarred sauce, spices adjusted to taste, and thinly sliced mozzarella. I layer 1/2 of the meat mixture in the pan, place a good layer of cheese over all, top with the remaining meat pushing the sides together so no cheese escapes. When almost done, I spread a little sauce on top. I've made it for many church pot-lucks and always bring home just the dish!

Apple Yam Casserole
I made this recipe twice in two weeks after being given a bushel each of sweet potatoes (yellow & white) and apples. I tweaked the recipe with additions of cloves/ginger/nutmeg/Chinese 5 Spice/dried orange peel/and a dash of vanilla. Family & friends couldn't decide if it was better as a side dish or a dessert!! A definite keeper.

Oatmeal Raisin Cookies IV
These went over GREAT with my family, friends, and students. Hubby said that they were better than his mom's!! (It yielded many more than 36 cookies, though.) This one is surely a keeper with many copies of the recipe passed around.
