Quinoa Chard Pilaf

Whoa, bland. My husband picked out this recipe, and by the time I got to the end I double-checked it to see what I had forgotten...and I had forgotten nothing. The flavors in this recipe are exclusively earthy; it desperately needs an acidic flavor to balance it out. I added some red wine vinegar to the finished product, and it helped a lot. If I were to try it again, I would add a good amount of tomato along with the chard. Recipe as it is was a fail for me.

Aussie Chicken

Pretty good but needed a little kick, possibly some pepper added to the honey mustard or maybe some capers. Overall it's a keeper.

Cranberry Chicken III

This recipe was very good. I gave it four stars (it's hard to get 5 from me). I did make a couple of changes that I liked: I added parsley, sage, and thyme to the recipe, and shortly before finishing grilling, I tossed the marinade into a saucepan and added a little cornstarch with water as a thickening agent, and brought it to a boil for three minutes. I then poured this over the top of the chicken. This worked very well.

BBQ Chicken Sandwiches

This was a hit at our 4th of July party even without the coleslaw. Doubled the recipe, used boneless skinless chicken breasts cooked in the crockpot. Don't leave out the Liquid Smoke--it makes the sauce.

Yum! Great recipe, unique flavor. It made a lot of marinade, so we divided and used half at a time. Next time I'll add even more jalapeno pepper for extra spice.

Au Gratin Potatoes II

Tasty recipe, husband loved it. 1/2 cup butter is WAY too much for my taste; next time I'll use a few tablespoons with bread crumbs instead. We sliced the potatoes instead of shredding them and used sliced Vidalia onions instead of green. Nice variation, but takes much longer to cook.

Summertime Tuna Pasta Salad

Wonderful recipe, great for those days when you want something light and fresh. I add Spike and other herbs (including garlic & onion powder) to this, and it tastes wonderful. Prep time isn't the shortest because of the time required to wash and chop the veggies, but it's worth it.
