Chocolate Chex® Caramel Crunch

Made this for a Christmas gift and could hardly keep out of it! It is really yummy! I couldn't find chocolate chex so I used 1/2 corn, 1/2 rice and then drizzled with 1/2 chocolate and 1/2 white chocolate chips. After I poured over the mixture on the cereal, I spread on a cookie sheet and I baked it for 20 minutes at 200 in the oven as opposed to microwaving the entire mix. Then I spread on parchment paper and drizzled the melted chocolates. Great and easy recipe!

Spanakopita (Greek Spinach Pie)

I have made baklava for the past couple years at Christmas and I always have left over phyllo. This year I decided to try a new recipe to use it up. I had to altar the recipe quite a bit because I didn't have the exact ingredients but it still turned out incredible! I used red onion instead of green, cilantro instead of parsley, cream cheese (about 3 oz) instead of ricotta, parmesan and a deli swiss cheese mix from my locally owned grocery instead of feta. I added extra garlic, salt and pepper and sauteed the veggies in butter instead of olive oil. I did use olive oil to brush the phyllo. I also used extra phyllo on the top. This was just so delicious. Do not be afraid to try it! It was easy too!

Brownie Biscotti

This was my first attempt at Biscotti and I am happy to say it turned out great! I baked the biscotti on a baking stone then let it cool before cutting for the second bake. I drizzled dark chocolate and semi-sweet chocolate on them. I dipped some of them in white chocolate at one end. Great recipe!

Easy Decadent Truffles

These truffles were easy but not so decadent. They were good but they just tasted like thick chocolate frosting or at the very best, fudge. I will try a different recipe for truffles next time.

Pumpkin Bars I

Delicious! I used 10X13 stoneware bar pan, left the walnuts out of the cake, and used the Cream Cheese Frosting II recipe from this website. Then I added toasted pecans on top of 1/2 the pan for us nut lovers. This is more like a sheet cake than traditional cookie bars but it is absolutely divine! Everyone in my house LOVED them!

Slow-Cooker Chicken Tortilla Soup

Great recipe and very versatile. I only had green enchilada sauce and rotel tomatoes so that is what I used. I also did not cook the chicken ahead of time but let it cook in the crockpot. I then removed it, shredded it and then returned it to the pot. I added the corn and a can of pinto beans during the last hour of cooking. VERY YUMMY and the perfect soup for those cold fall/winter days!

Pizza Crust for the Bread Machine II

This is an easy & delicious pizza crust recipe! I substituted 1/4 cup whole wheat flour for 1/4 of the bread flour and I added 1/2 tsp. garlic powder and 1 tsp. oregano to the flour. My 6 year old LOVED it! I spread cornmeal on my pizza stone and pre-baked the crust for 5 minutes. Very tasty!

Buffalo Chicken Fingers

Great recipe! I made two minor modifications to please my family. In order to kick up the flavor, I marinated 1/2 the strips in Franks Buffalo Sauce for me and my husband. To make the other 1/2 of the strips kid friendly, I left the cayenne pepper out of the flour mixture and rolled their 1/2 of the tenders first before adding the cayenne to the second 1/2. My kids loved these which is wonderful because they are huge fried chicken nugget fan. They really gobbled these up! My husband and I mixed lite ranch dressing with Franks Red Hot for dipping. YUM!

Winter Fruit Salad with Lemon Poppyseed Dressing

This salad is soooo delicious! I've tried it with feta & mozzarella instead of swiss cheese and I've used toasted walnuts instead of cashews. The dressing is fabulous as well. I usually double the lettuce and that gives me more servings. Yum-O!

Banana Chocolate Chip Cookies

This recipe really suprised me! It was very good. My kids loved these cookies too. I only had two cups of flour left so I threw in a couple packets of Kashi Maple Brown Sugar Oatmeal in with the flour(making banana oatmeal choco chip cookies). I also only had one stick of butter and 3/4 c. mini choc. chips but they came out really good. Mine got a little crispy on the edges and soft in the middle. Baked at 350 for 15 minutes. They are very much like a "muffin top". Yummmm!

Banana Nut Muffins

I was looking for a lighter banana muffin recipe but one that my kids would still enjoy. This recipe fit the bill! They LOVED them and I did too. I did make a few minor modifications. I left out the lemon, used one whole egg instead of 2 whites, used 2T oil instead of three, used 1 1/2 cups of banana, added 1/2 tsp. Pampered chef cinnamon blend and lastly added 2 T. wheat germ to the flour. It sounds like I changed too much but really it was quick, easy, light and tasty. Great basic recipe without all the butter and oil in typical muffins but not tough like some low fat recipes.

Black Bean Soft Tacos

These are super simple and delicious. Every Friday is Taco night at our house and I was looking for a change of pace from the ground beef variety. I added 1 C. frozen corn and some fresh cilantro. I also had to use a fresh tomato because I was fresh out of canned tomatoes. I also added a little water to prevent mixture from drying out (since I didn't use the canned tomatoes). YUM! We prefer corn tortillas for tacos and they were perfect with this recipe. Will definately make again.

Saltine Toffee Cookies

I really LOVE this recipe but I do have a couple comments. I have made it several times and most of the time it is so yummy. However, today I made it and when I put it in the oven for the 5 minutes it burned beyond saving. I was very disappointed as it was the last of my butter! The last time I made it, it was a humid day and it came out chewy instead of crunchy. But it was still good. Every other time, it came out perfect. I made these for Christmas and after I spread the chocolate I decorated them with chopped up white chocolate pretzels, chopped pistacios and red and green mini M & M's. They were delicious. I prefer less chocolate chips than this recipe calls for. I think too much chocolate takes away from they toffee taste. GREAT recipe!

Baklava

I have never made Baklava before but wanted to try it when my mom told me how much she loved it. I thought I would make it and give it to her for Christmas. Well, I am on my second piece already and it hasn't even cooled! It is so good. I hope it makes it to her house this week! I used a combination of hazelnuts, pecans, and pistacios. I thought there would be too much of the nuts but ended up almost running out at the end. I used 1T. Korte cin and 2T. sugar in the nut mix. I used a spray bottle for my melted butter and that worked well. I did not spray the top layer until after cutting. I had no problem with the phyllo. The hardest parts of this recipe are cutting the baklava in the triangles and trying not to eat it all! Thanks for the great recipe!

Cream Cheese Mints

These are so yummy! They are hard not to gobble up while you are making them! I used 1/2 tsp. peppermint extract and added a little powdered sugar as needed. I was afraid to add the food coloring at first and rolled most of them in different colored sugars (I used red, green, yellow, and blue). I got brave with the last dozen and split the dough in half and kneaded in a couple drops of food coloring paste (half red, half green)then rolled them in the same color sugar. They were gorgeous that way!!! I wish I would have made them all that way! Excellent recipe. My 4 year old keeps wanting just one more!

Chewy Chocolate Chip Oatmeal Cookies

I almost didn't make this recipe because I read some not so good reviews. Boy I am glad I made them anyway. They are delicious! I only had 3/4 c. butter but it didn't seem to matter. The one thing I did differently than usual was I did not let the butter get too soft. Just soft enough to mix but not melty at all. I think that helped the cookie to stay puffy and chewy. I also did reduce the salt to 1/2 tsp. because I use salted butter and I used dark chocolate chips. YUMMY! My kids LOVE these!

Cinnamon Rolls III

These are the BEST Cinnamon Rolls ever! My husband has been making them for awhile as a special treat for birthday and holiday breakfasts. He made them yesterday and I decided I would finally write a review. He does not change anything (except he leaves out the nuts -- much to my dismay). They always come out PERFECT! YUMMY!
