My favorite things to cook
My absolute favorite thing to do in the kitchen is to bake and make various desserts and candy. I love to bake cookies, cakes, muffins and just about anything yummy! I love Christmas because it gives me an excuse to bake a million cookies and make lots of different candy. I prefer (and I am better at) cooking ethnic foods and unusual dishes or casseroles to traditional fare (I still haven't mastered basic fried chicken!). I love to make soups, chili and stews from scratch in the winter time. Cha Cha's White Chicken Chili is probably my FAVORITE recipe on this website! YUM! In the summer I like salads, especially fatoosh, tabouleh, various spinach salads, zuchini dishes and of course grilling just about everything from salmon to cabbage!
My favorite family cooking traditions
We like to bake and decorate cookies at Christmas. We like to make our own pizza/calzones dough and everyone in the family gets to choose their own fillings/toppings. We also have "taco night" and although the kids prefer the traditional taco, we occasionally try different taco recipes such as fish, chicken or black bean tacos from this site to add some variety.
My cooking triumphs
I made the The House Fried Rice & Honey Grilled Chicken from this website one night for me and my three kids. It was the first time I had used the gas grill too! Everything tasted so good! I also made the Pumpkin Cheesecake with the Gingersnap Crust from Allrecipes a couple years ago for Thanksgiving and even though it was my first cheesecake, it came out perfect!
My cooking tragedies
When my husband I were newlyweds I was a vegetarian. I once tried to make a Tofu meatloaf. It was so incredibly gross. He teased me about it for years!

Spanakopita (Greek Spinach Pie)
I have made baklava for the past couple years at Christmas and I always have left over phyllo. This year I decided to try a new recipe to use it up. I had to altar the recipe quite a bit because I didn't have the exact ingredients but it still turned out incredible! I used red onion instead of green, cilantro instead of parsley, cream cheese (about 3 oz) instead of ricotta, parmesan and a deli swiss cheese mix from my locally owned grocery instead of feta. I added extra garlic, salt and pepper and sauteed the veggies in butter instead of olive oil. I did use olive oil to brush the phyllo. I also used extra phyllo on the top. This was just so delicious. Do not be afraid to try it! It was easy too!

Brownie Biscotti
This was my first attempt at Biscotti and I am happy to say it turned out great! I baked the biscotti on a baking stone then let it cool before cutting for the second bake. I drizzled dark chocolate and semi-sweet chocolate on them. I dipped some of them in white chocolate at one end. Great recipe!

Easy Decadent Truffles
These truffles were easy but not so decadent. They were good but they just tasted like thick chocolate frosting or at the very best, fudge. I will try a different recipe for truffles next time.
