My family decided these were more muffin like the way i made them. I made a few changes, but really liked the overall outcome. First, I used margarine instead of shortening, sour milk (milk + lemon juice) instead of buttermilk, egg substitute (like egg beaters) instead of eggs, and used about 1/3 cup mashed banana (only had 1 over-ripe banana on hand) + a little more than 2/3 cup of pumpkin purée, and added a few dashes of pumpkin pie spice in addition to the cinnamon and nutmeg called for in the recipe. They came out a nice color, flavor and texture, and are great for fall!
