Penne with Asparagus and Mushrooms

I improvised on this and it was great! I added red bell pepper and used tomato paste and chicken broth since I didn't have canned tomatoes. To cut down on the fat, I used less oil, and added light sour cream, skim milk, and a little heavy cream. Very easy to lighten this up!

Mexican Tinga

This was really good! I used maybe 2 chipotle peppers and some sauce and also made rice to give people options. In addition to just eating it with warm corn tortillas, it was good with rice added to the tortillas and just on top of rice. Will be making again!

Fish Chowder

I made this with mahi mahi and added a can of chopped clams. I came up short on the clam juice so I made up the volume with fat free half and half, and used just 1 can of milk. Definitely add lots more Old Bay...will make again, was a big hit with friends!

Easy Batter Fruit Cobbler

Penne with Spicy Chicken Sausage, Beans, and Greens

I used chicken and gouda sausage from Costco and sun dried tomato pesto and feta. It turned out great and smelled amazing with the wine! Will definitely make again trying different combos- maybe homemade arugula pesto and spicier sausage.

Pizza Crust I

BBQ Chicken Pizza II

Made pizza dough in the breadmaker, pre-cooked it for a few minutes before adding toppings. I added some oil-packed sun dried tomatoes along with the peppers and used some fresh mozzarella in addition to monterey jack. Got rave reviews!

Crepes with Spinach, Bacon and Mushroom Filling

I tweaked the ingredients a little but got rave reviews and thought I'd share. I omitted bacon but sauteed baby portabellas and onion, added spinach and lots of feta and some romano cheese (kept the flour/butter/milk base the same). I made the egg sauce, cutting lemon juice in half, and poured over the stuffed crepes in a casserole dish. I baked at 350 for about 15 min. There was a lot of egg sauce left over though so I would probably half it next time. Turned out great!!

Basic Crepes

These were great! I tripled the recipe and made them smaller for a brunch party. I made the regular recipe for spinach/mushroom/feta crepes (based on the spinach bacon mushroom crepes from this site). Half way through I added some sugar and cinnamon and made banana crepes with a brown sugar rum sauce. Everyone loved them, especially the spinach ones!

Thai Green Curry Chicken

I used green curry paste and had to add a bunch extra to get the flavors perfect. Also added frozen bell peppers and peas. Served over jasmine brown rice. It was a big hit!

Chicken Tortilla Soup V

I'll make this again, but add more broth. I added a can of kidney beans and topped with pepper jack cheese, avocado, and sour cream. You HAVE to use good salsa since that's where so much of the flavor comes from, don't skimp!

Tasty and easy. I just dumped stuff in based on the recipe, used red wine, added more garlic of course, and some basil. I really liked the smooth consistency and was great to sop up with bread.

Honeysuckle Pineapple

Very good- I didn't have cherry brandy so I used dark rum and marinated the mix for about 3 hours. I didn't have ice cream either so I mixed some light sour cream, honey, cinnamon, and a little vanilla to make a dipping sauce. Great way to liven up a tateless pineapple!

Bar Cookies from Cake Mix

This is nice because you can throw just about anything you have in it. To get rid of odds and ends in my fridge, I mixed butterscotch chips, semisweet chips, and 70% bittersweet baking bar, ~1.25 cups in all, added pecans and a little extra water as suggested. Next time I'll make in several smaller pans because the edges and corners are the best, a little crispy.

Mango Cardamom Bread Pudding

This was excellent! I used day old french bread- made it nice and crisp on top. Can easily add more or less mango or bread to this recipe depending on your preference.
