Sage Pork Chops

Awesome flavor - NO need to add the 2 t. of salt as the bouillon adds more than enough. At the end, I took the chops out of the broth and thickened it up with a dash of cornstarch. I also added a few garlic cloves at the beginning.

Mom's Zucchini Bread

AWESOME!! I made only one loaf, and wished I had made two. The only changes I made were to use 3/4 c. white sugar and 1/4 c. brown, substituted plain yogurt for half of the oil, and didn't use walnuts. Delicious! I can't stop eating it!

Chicken Pot Pie IX

AWESOME! I did make a few changes: one pie crust on top (would have been too rich with two); canned peas instead of frozen; added one large potato and boiled with chicken and veggies; cooked some garlic with onion; added 1 t. fresh basil, a pinch of thyme, and a little chicken seasoning to the mix; no celery seed.... also, keep in mind the suace should be relatively thick... I turned mine up to medium-high heat and continaully stirred until it was thick... turned out perfect consistancy... delicious!

Amish Breakfast Casserole

Really good! Will definately make again. I cut down on the bacon and added cubed ham - also used 2% cheddar - I mixed everything the night before, refridgerated it, and cooked it the next morning. It did need a longer cooking time, probably closer to 55 minutes.

Aunt Mary's Banana-Chocolate Chip Bread

Delicious! To make it lower fat, I used 1/4 c. Smart Balance with 1/4 c. applesauce instead of 1/2 c. shortening. I also added 1/2 t. cinnamon and it came out perfect!

Bacon and Tomato Cups

Great! I made it for a Thanksgiving luncheon and they were eaten right away. Changes I made: used turkey bacon, sharp cheddar instead of Swiss, 45 mini phyllo cups (found in the freezer section) instead of biscuit dough, and used just enough low-fat mayonnaise to mix everything together.

Morning Glory Muffins

Great recipe! The only thing I changed was that I left out the nuts. Everything else was the same and it came out delicous - will definately make again. It tastes like a delicious, lighter version of carrot cake. I ate them with fat free cream cheese and were very yummy.

Cajun Chicken Pasta

Very good taste, not great presentation. I made the following changes: 3 t. Cajun seasoning, no green pepper, 1.5 c. fat free half-n-half, added 1/2 T. cornstarch to sauce.... turned out delicious and slightly spicy!

Spanish Rice II

Very tasty rice recipe with the following changes: used basmati (Indian) rice, no green pepper, added 1 t. garlic with the rice, chicken broth instead of water, drain the tomatoes and green chilis before adding, and only one t. chili powder. Served with "Beef Enchiladas II" and it make quite a meal!

Beef Enchiladas II

These turned out pretty good - my boyfriend said to add it to the "must make again" list. I did change some things... I added 2 t. garlic and some taco seasoning to the beef and used canned enchilada sauce. I used flour tortillas because I couldn't find corn tortilla, and they turned out a little soggy - next time will definately use corn. Good recipe!

Banana Cake X

Great recipe - good banana flavor and very moist (almost too moist for me, but people at work raved about the cake.) I used a yellow cake mix and drizzled it with a mix of lemon juice and powdered sugar. People loved this cake!

Caramel Apple Pork Chops

Very good and simple. Even my boyfriend loved it and requested it again, and he does not like pork chops. As he described it, it is "pork with apple pie on top." Next time I will definately make more apple topping.

Carrot Cake III

Wonderful! We made it for Easter brunch and it turned out perfectly. I changed the recipe slightly: I changed the oil to 1/2 c. applesauce and 3/4 c. oil, only used 1/2 c. pecans, added 1/4 t. nutmeg and used 1 c. white sugar and 1 c. brown sugar.

Broiled Tilapia Parmesan

Wonderful! I was skeptical while mixing the parmesean topping but it turned out absolultey delicious. I used shredded Paremesean cheese, substituted garlic powder for the onion powder, substituted Italian seasoning for the basil, and added 1/8 t. cayenne pepper.

Delicious Ham and Potato Soup

Wonderful! I changed the recipe slightly... I used garlic seasoned chicken broth instead of water and boullion (I used the same amount of chicken broth as water the receipe called for...) I also used skim milk and it still turned out very creamy... just make sure to cook the flour/butter mixture until it is quite thick. I served this with crusy warm French bread and it was perfect for a cold winter day.

Wonderful! I followed the recipe exactly, except for using 1/2 c. butter and 1/4 c. Smart Balance (cholestoral-lowering margarine.) They turned out delicous and got rave reviews. Would definately make again.
