Brazilian White Rice

I could've sworn I already reviewed this recipe! Hate when that happens. Anyway, this is a wonderful way to add subtle flavor to plain rice. I used more onion & garlic than called for & I topped it with thinly sliced, fried garlic chips. Browning the rice in oil adds a nutty flavor that really makes all the difference. Thanks Nanda:o)

Baked Kale Chips

Who is a clever girl? LucyDelRey that's who! These were fabulous! Thanks to the other reviewer's suggestions on cooking time & oven temp, mine turned out just right. This is the perfect way to get your crunch on without any guilt at all. Applause, applause! :o)

Black Salt Asparagus

I've had a jar of black sea salt languishing in my spice rack forever so right away I have to thank you for the only recipe I've ever seen that uses it. And it works! I never use my broiler and didn't feel like turning on the oven so I sauteed my asparagus in some Kerrygold butter and a little water until tender/crisp. Sprinkled on the black sea salt just before serving and really enjoyed the unique flavor of the salt with the asparagus. One thing though, once salted, you should eat it right away. The salt starts to liquefy and turn into a very unattractive mess. I really think its best use would be on cold or room temp foods. Thanks for this one! :o)

Banana Oat Muffins

This recipe is fabulous & I've lost track of how many times I've made it. You simply can't mess it up, no matter what you add or in what form you bake it. I've made muffins, loaves, & cakes. I've added carrots, apples, raisins, nuts, pineapple & flaxseed in various combinations & this recipe still works to perfection. My dog even likes it so much that I make mini muffins without the sugar for her! Very healthy, very flexible, & very much loved at my house. Thanks so much for a great recipe:o)

Pineapple Banana Bread

This is awesome bread! You wouldn't really expect canned pineapple to add much in the way of flavor but it really did & without overpowering the banana. I only had Egg Beaters so that's what I used & it made the bread a little "bouncy" but even so, I'll be making this for years to come. (Sorry G'ma D.):o)

All-Day Apple Butter

I am so happy with myself right now! I made apple butter! I've never even made jelly before! HAPPY DANCE! This turned out so delicious. I cut the sugar down to 2 cups & used 3.5 lbs. of Fuji apples. Absolutely fabulous! No pic cuz let's not lie, this stuff is brown & not particularly photogenic. And I'm lazy today:o):o) Thanks so much for sharing!

Fresh Cherry Cobbler

Man, I messed this up six ways to Sunday. The cherries were Bing & were huge & I used too many. The batter didn't rise but turned out more like a butter toffee candy bar intersected by semi-deflated cherries the size of plums. My bad. Am I eating it? Uh, hell yeah! Even made incorrectly, it still tastes awesome:o)

Grilled Rosemary Beef Tenderloin

I think the name of the recipe is a little misleading. All of the flavor comes from the steak seasoning, which I love & use often. Dried rosemary & parsley?!?!? Not in this house. That's like an insult to tenderloin! I did however make a compound butter to melt over the top & no, it didn't need it but man, that took it over the top. I was a very bad girl tonight. Don't judge me:o):o):o)

Grilled Halibut Steaks

This was wonderful! Rather than wasting the butter by using it to baste the fish while grilling, I made a simple butter sauce with the herbs & some reduced white wine & poured it over the halibut after it was plated. This is my first time cooking halibut & I'm thrilled this is the recipe I chose. Thanks so much:o)

Easy Slow Cooker French Dip

This was pretty good for what it is. I rarely if ever slow cook meat but I wanted something cozy that day. And that's what this meal is, cozy. The leftovers were made into hash, and beef gravy to serve over mashed potatoes. I think that's the reason I liked it as much as I did. Nice leftovers! Thank you much! :o)

Bacon for the Family or a Crowd

Chipotle Chicken Salad

I enjoyed this quite a bit! I don't find that many uses for chipotle in adobo sauce so I was happy to come across this one. I love the smoky heat and the sharpness of the feta. I used it as a spread for toasted pita triangles. I'll use this recipe many times in the future. Thanks! :o)

Virgil's "Top Secret" Pork Chop Marinade

I highly recommend marinating overnight as stated in the directions. I didn't have time to do that and although my pork was a beautiful color after grilling, it didn't have much flavor. Thanks for sharing. :o)

Gingerbread Pear Cake

This is a quick & delicious cake that can be personalized endlessly to suit anyone's taste. I made it as written except for replacing the water with pear juice. It made the whole house smell like Christmas & I was even inspired to take a pic which I'll post when I'm not having such a lazy day:o) Thanks Mallinda!

Cranberry Upside-Down Coffee Cake

This is a beautiful cake. I love, love, LOVE the cranberry/pecan caramel topping & wouldn't hesitate to recommend it. I had to use dried whole cranberries that I rehydrated to plump them up a bit & bourbon praline pecans. The result was still addicting & I can't wait to try it again with fresh cranberries when they're in season. I didn't use the actual cake part of the recipe but certainly will next time. Thanks for a new take on an old favorite. :o)

Lemon-Sesame Asparagus

Lemon, butter, & asparagus are a match made in heaven but add sesame seeds and you have a stellar dish. I used butter as opposed to margarine but I used a little less than called for. Personal preference. This plates up beautifully, tastes very bright and fresh, and I will definitely be making it again. Thanks so much for sharing:o)

Quick and Easy Cheese Bread

This is a great recipe!! Unfortunately I used a loaf pan that should've been donated to the Smithsonian Institute's Antiquities Department a long time ago. And I shouldn't be allowed to bake. The middle came out of the pan separately from the crust so I didn't have any slicing problems:o) Nevertheless, we ate the entire thing straight out of the oven & I'll be getting new bakeware tomorrow! I just love these win-win situations. Thanks:o)

Grilled Pork Chops with Balsamic Caramelized Pears

This recipe is all about the sauce. It's that good. I made a double batch. I used half for the pork-beautiful! The other half I cooked down into a chutney & used it as a topping for brushetta with melted gorgonzola on top-Oh Mommie!
