Taco Seasoning III

I reduced this recipe and had no problem with it being too hot. I admit that I added aspects of other recipes such as paprika and beef stock instead of water and we loved it! If an ingredient seems too extreme for you then it probably is! Adjust to your tolerance. A recipe is only a guide and shouldn't replace common sense. Wonderful recipe and thanks for sharing. :o)

Smoky Grilled Pork Chops

My better half and I have been trying grilled pork chop recipes lately and those that we've tried have all been absolutely delicious but this is our current fave. Juicy, smoky, and tender. We seared them before continuing with the recipe and I certainly recommend that step. Adds another layer of flavor to an already flavorful recipe. :o)

Tomato-Cornbread Salad with Avocado and Cilantro

I've never had cornbread salad but I know this one isn't true to form. I picked it for the lack of mayo and I'm glad I did. Hubby thought it needed something and added just a bit of Pace Picante sauce. He's a smart man. And please dry out your cornbread cubes before using and let them soak up the vinaigrette for about 10-15 mins. You want them to have a chewy texture, not mushy. :o)

Grilled Lemon Herb Pork Chops

Tastes like steak? Let's not go into La La land! However, this recipe surpasses the sum of its parts. Juicy, delicious and no one flavor overpowers the others. I don't taste the lemon, per se, but rather a citrus back note that perfectly compliments the meat. I get happy when I find a tasty, easy recipe and this one fits the bill. :o)

Refreshing Cucumber Salad

I followed the recipe exactly but after letting it sit for a few hours, added just a touch more vinegar and a combo of fresh mint and dill. It's an excellent cuke salad recipe for when you don't have any sour cream on hand. Very refreshing when served ice cold. Thanks Shawna Rae! :o)

Coriander and Cumin Rubbed Pork Chops

Fried Green Tomatoes with Shrimp Remoulade

This was outstanding! Everything about this recipe works and works well. The Remoulade is delicious on both the shrimp and the green tomatoes. If you want a dish that is sure to impress but not overly complicated to make, this is the one you need. Thanks for sharing! :o)

Manhattan Meatballs

Fabulous! I think this would work better in a slow cooker but otherwise, the glaze itself is addictive. I used pineapple preserves and Baby Ray's. It's my nature to tweak recipes but I left this one alone except for the cooking method and we loved it. Thanks! :o)

Best Ever Crab Cakes

I like these and they came together quickly. However, you just can't make crab cakes without Old Bay so I added that and left out the tarragon. I'll be serving these for New Year's Eve. Thanks! :o)

Corn Fritters

I thought these were pretty good. Mine came out nice and fluffy and light. My only issue is that they're kinda bland. Neither particularly sweet or savory. Easy enough to tweak, though. Thanks. :o)

Blue Cranberry Sauce

This comes together very quickly and the colors are gorgeous! I had to add just slightly more sugar as my cranberries were pretty tart and I used frozen blueberries instead of fresh. The flavor is much more complex than the ingredients suggest. I think it's fabulous and I hope the family loves it on Turkey Day. If not, then it's all mine! Thanks a lot for a different take on an old favorite. :o)

Pork Normandy

We thought it was bland. There are no seasonings in this. I like a spiced brown crust on my meat to give it some flavor! The sauce was very bland as well. I guess the word "bland" sums it up for us. I'm glad others liked and enjoyed it but it just isn't our type of dish. I won't be making it again but appreciate your sharing it. :o)

Beef Tenderloin With Roasted Shallots

This sauce is a stand alone masterpiece. Doesn't matter what you serve it with, you will always get compliments. College Inn Sirloin Beef Stock totally rocks this recipe. It's already a flavorful stock but once you reduce it, it's phenomenal! I could go on & on but I'm running out of "characters remaining". Oh yeah, the tenderloin was good too. LOL. :o) :o)

Rosemary Lemon Grilled Chicken

First of all, how does one "marinate" something in butter? I marinated my chicken in olive oil along with the other listed ingredients & made a compound butter to put on top of the grilled chicken. The lemon & zest is overpowering, both in the marinade & the butter & made the dish so acidic. I frequently use lemon/rosemary together with good results but this recipe didn't work for me.

Chicken Stew with Dumplings

I'm reviewing this recipe for the dumplings only. If this recipe worked for you, congrats! After giving it 3 tries, I'm done with it. The first time I made it as written. Too gloppy. The second time I cooked them longer. Too gloppy. Tonight I left out a quarter cup of the milk & cooked them longer. Same result. I'm not saying it's a bad recipe but it didn't work for me at all & I won't be bothering with it again.

Spinach Arancini

For once, I followed the recipe exactly & I have to say, this was the best risotto I've ever had & I'll make it again. Not the balls though. It wasn't that they were terribly hard to make but once fried, the risotto lost all flavor for me & just tasted like fried breadcrumbs. We call that "brown food" around here & neither one of us cares for it. The recipe is excellent, easy to follow, & a good use for leftover risotto but I'd rather have the risotto as is cuz it ROCKS!

Seared Sea Scallops

This was really good but you need to let the pan come up to the proper heat before you add the scallops. There's a smidge too much dried oregano. Oh, and if you swirled a bit of butter into the pan juices & added the lemon juice to that, you'd have a delicious sauce. :o)

Chewy Brownies

These are my fave, (& only brownie recipe), I've ever made from scratch. I like the fact that they're chocolaty & chewy. You can savor them without overdoing it. I added a bit more cocoa powder than called for but that's just a matter of taste. :o)

Balsamic Chicken and Fresh Mozzarella

I didn't exactly change this recipe, I just kinda adjusted it to suit my taste while staying true to the concept. I used white balsamic in the marinade, grilled the chicken, slightly melted the mozz, drizzled some reduced reg. balsamic & served on top of couscous that had tomatoes, kalamatas, onion, fresh herbs & reg. vinaigrette I think the recipe is outstanding as is, I just like to tweak a lil bit. Thanks so much! :o)
