Baked Scallops

I made this with shrimp instead of scallops. We loved it. Next time I would half the bread crumb mixture. Otherwise, great recipe.

This was Amazing. Our family loved this recipe. Even those who don't like scallops enjoyed it. The key is to get as much moisture out of the scallops and spinach as possible.

Chocolate Chip Meringue

This recipe was great! I halved the mixture before I added the chocolate chips and instead added some peppermint extract. Nice and Light! There is not much more that I can say that hasn't already been said.

Spinach Bread

I did not have all-purpose flour. Instead I substituted Bread Flour. It turned out delicious! It really showcases pepper as an excellent spice!

Classic Tiramisu

This Tiramisu is AWESOME! My mom and I made it for my 18th birthday. We splurged and used all Mascarpone cheese. I couldn't find ladyfingers. We baked 1 pound cake, let it cool and then sliced it. This worked great! We had a group of friends and family over and we all cooked a dinner of: Grilled Shrimp, Cheddar Bay Biscuits, Sugar Snap Peas and Sweet Potato Bake. It was awesome. All enjoyed.

Butternut Squash Bisque

If you could rate this recipe any higher, I would. A few alterations: Bake squash 45 min. @375 deg. Add curry powder while sautéing the onions. Add cinnamon and allspice. & Add 1/2 cup OJ while cooking. This makes a fantastic Bisque! My dad loves it. Every time he sees a Butternut Squash he begs mom and me to make this.

Banana Crepes

I loved this recipe. The crepe part was delicious. It was softer and chewier than most I have tried. For the filling I didn't have brown sugar so I used Molasses and Honey instead and only 1 cup milk.

Homemade Pizza Supreme

I only used the recipe for the pizza dough. It was excellent. The whole family loved it. I used spaghetti sauce . For toppings: Cheddar cheese, Parmesan cheese, sliced mushrooms, banana peppers, tomatoes and seasoned ground beef. It was great. Will definitely try again.

Crustless Spinach Quiche

Although I think this recipe is good, I changed it quite a lot. I only used 1 cup cheese and used cheddar. I also added 2 oz fat free cream cheese and about 1 cup plain fat free yogurt. I did not use the cooked onion step. Instead I substituted crushed red pepper flakes, dried minced onion, garlic powder and nutmeg.

Applesauce Oatmeal Cookies

I loved these cookies. However, I don't really like very sweet things. I added raisins to this recipe and didn't add as much butter. Will definitely try again.

Cajun Style Baked Sweet Potato

I guess these would be good if they weren't so spicy. My family could barely eat them and we like spicy food. I even used three potatoes and it was still too much spice. However, I did slice them and then put them in a ziploc bag with the spices and shake them up. Maybe they picked up more of the spices? I was really bummed with this recipe. I think I will try it again though.

Scottish Oat Scones

What this recipe for me needs is more sweetness. I used brown sugar like another reviewer suggested. I think it has too much baking powder. I also added the cinnamon and nutmeg like another reviewer suggested. Next time I will use applesauce instead of butter and add more raisins and spices. A good place to start.

Cucumber Soup I

This is a very different recipe. I liked it, but my mom did not. I did not seed the cucumbers. I just peeled and diced. I didn't have farina, so I added half of a potato. It tasted fine. Great for a change.

Bread Machine Calzone

This made a delicious bread mix. I made four individual calzones. I put grilled chicken and spinach in mine. I did add 1 tbsp. each of garlic powder and Italian seasoning. Will definitely use again.

French Breakfast Puffs

These were absolutely delicious! They were so light and tender. I ran out of butter so I lightly sprayed each puff with Pam spray and then rolled them in the cinnamon sugar mix. They were white when I took them out of the oven, but they were done. I just wasn't expecting them to look that way.

Apple Banana Cupcakes

These muffins were great! Next time I will chop the apples instead of shredding them. I did not peel them. I used applesauce instead of shortening. And I substituted 1 cup oats instead of 1 cup flour. They were so good!

Chicken Pot Pie IX

This was an interesting chicken pot pie. I had to substituted some things. I used a casserole dish instead of a pie crust, but I added rice to compensate for the bread. Next time I will double the liquid mixture; it had a great taste
