California Chicken

We really enjoyed this! I used a shredded colby/jack mixture for the cheese and instead of avocado slices I made some guacomole. It really gave it a nice kick. I also served it with sour cream and olives. Great meal with great flavors.

Pesto Cheesy Chicken Rolls

This was great and easy! I took other reviewers' advice and just spread pesto over the chicken breasts, topped with the cheese, baked covered for 30 minutes and uncovered for 15 mins. Came out perfect. We love pesto.

Chicken and Asparagus Bundles

We love this recipe! It comes out looking so pretty. I don't do the sauce listed, but instead make a homemade Hollandaise. I also leave off the green onions. This is a keeper for us.

Chocolate Mint Cookies I

These were good cookies, but they are not my favorite. Andes mints are definitely the way to go. I tried After Eight mints and junior mints because I couldn't find Andes. When I did find Andes they were way better! Take the time to find the right mints. It is worth it.

Beth's Spicy Oatmeal Raisin Cookies

These were excellent! Moist and yummy. They are my favorite cookie recipe from this site. I did have to cook them a little longer than stated, but otherwise I kept everything the same.

Artichoke and Black Olive Baked Chicken

This is a staple recipe in our house. I love the combination of the artichoke hearts and olives together. I use marinated hearts for a little added flavor, otherwise I pretty much follow the recipe. Comes out tender and juicy.

Chewy Chocolate Chip Oatmeal Cookies

I don't bake very often, but these cookies made me look like I do! They were great! I took another review's advice and used half chocolate chips and half chopped up heath bar. I took them to Thanksgiving and they were a big hit. Very easy to make. Like other reviewers I added 1/4 cup of flour, 1/2 tsp baking soda, halfed the salt and let the dough set in the frig for 15 minutes. Great recipe!

Mouth-Watering Stuffed Mushrooms

I twist this recipe a little by adding cooked ground sausage to the recipe. I use Jimmie Dean's bold country flavored sausage. I replace half of the cheese mixture with the sausage and they come out just awesome! I take them to every event we go to because they are always requested. There are never any leftovers. These are a great low carb option!

Red Pepper Soup

My husband and I absolutely love this recipe! I have made it many times now at home and for other people. Everyone is surprised at how much they like it. I follow most of the directions, except I use a jar of marinated peppers and I don't strain the soup after I puree it. I put it all back in the pan. I also add red pepper to give it some zing. A great recipe, especially for low carbers!

Best Beef and Broccoli

This was good, but I would have preferred more of a kick to it. It was a little bland, but definitely better than the other beef and broccoli recipes on this site. The condensed soup really adds some flavor. Next time I will try to get some sort of Chinese hot sauce to add to it.

Buffalo Chicken Rolls

These were great! I took the advise of other cooks and used hot wings sauce instead of hot sauce. I also cut the chicken down into smaller strips and used pepper jack cheese. This would be great as an appetizer too.

All American Roast Beef

This turned out great! I also laid the roast on some sliced onions. I had to cook it a little longer than the recipe called for to get it to medium rare. I used a meat thermometer. It was one of the best roasts I have had in a long time!

Butternut Squash Soup

It only took 1 butternut squash to get the six cups needed. I wish I had known that going into it- since I cooked two. Good taste, but it kind of looks like nacho cheese.

Fruit Dip II

My mother has made this since I was little and I have always loved it! It does shrink down in size when you make it because the marshmellow creme has so much air in it. When combined with the cream cheese it loses it's airyness and therefore its volume. But is great- just make more!

Chicken Encilantrada

This is great! My husband absolutely loves it. Cilantro is great anyways, but this is a quick and easy meal. The only change I made is to add three cloves of minced garlic in with the onion. We like garlic. My husband eats it by itself with shredded cheese and chopped tomato on top. I use it as a taco filling. Either way we have it about once a week. Thanks!
