Cinnamon Carrot Bread

I altered this so much, it hardly resembles the original, but it is great!! Here's my alterations: 1 c all purpose flour, 1 c wheat flour, 1 c applesauce,1 1/2 c finely shredded carrots, 2 tsp cinnomon, 1/2 tsp nutmeg, 1/4 tsp cloves, 2 egg whites,1/2 c white and 1/2 c brown sugars. Follow the same mixing and baking directions. So moist and yummy!(and healthier!)

Spiced Pork Chops

WOW! SO good! This is now a stand by in our house. I didn't have any dry mustard, so I added 1 tsp regular mustard to the ketchup mix. GREAT!

Clone of a Cinnabon

Wow! So rich! My rolls took quite a lot longer to rise, but they turned out fine in the end. If you are using AP flour, add one addtl egg white to the flour mixture to make up for the missing protein the AP flour vs. bread flour.

Linguine with Creamy Alfredo Sauce

To make this creamier and yummier, use greek yogurt--even non-fat greek yougrt is far thicker than regular yogurt. Add more garlic too...I like this recipe as a good base to work from. Thanks!

Baked Haddock

I used non-fat milk and nixed the butter to save fat and calories. SO yummy! I used a vented roasting pan to keep the bottom from getting too mushy. This is a keeper!!

Hamburger Hash

This recipe is just so-so as written, but can be great with a few tweaks. I added 2 tbls of garlic seasoning and a bit of diced onion. It's best with brown gravy over it. Add some carrots and corn for "pot pie without the crust". Good stuff.

Great! I skipped the pan frying option and just put them straight in the oven. They were a little soft, but soooo good. I used red onions and dried parsley.

Chicken Lo Mein

AMAZING!! I added 1 tsp of garlic chili paste to the chicken marinade and that gave it a good kick and I used frozed stir fry veggies from Costco--SO GOOD!

Sweet Pea Mockamole

Wow! I am amazed how good this is! It doesnt taste completly like regular guacamole, but it's so close if you didnt know it was peas-you wouldnt guess! I added a dash of cayenne pepper and a touch more lemon juice--yum!!

Chocolate Brittle Surprise

Oh! This is AMAZING!! I used graham crackers and ritz crackers...both are great-the graham crackers give it a sweeter taste, while the ritz make it a little more buttery. This is a keeper!!

Fat Free Refried Beans

SO good! Forget the canned stuff...this is the best! I also cut out the liquid smoke and cut down the salt, pepper and onion. I think i will cut out the onion altogether next time. I sprinkled in some crushed red pepper flakes. Yum!

Slow Cooker Chicken Taco Soup

Wow! This is sooo yummy! I followed the advice and added 1/2 tsp of cumin and 1/2 tsp of garlic. Served with mozzerella cheese and guacamole chips--WOW!
