Mini Meatloaves

Easy, kid-friendly and delicious! I didn't have ketchup so used our favorite BBQ sauce instead and used about 1/8 cup of brown sugar instead of 1/4. So good, and I will definitely put this in the rotation. Served with sweet potato fries.

French Dip Sandwiches

Great recipe, and a sandwich that the whole family enjoys. And the broth that comes from this........ wow! A must-save for beef vegetable soup. Nothing like a roast that sits in the slow cooker for eight hours. Thanks !!

Chewy Chocolate Chip Oatmeal Cookies

Love these. If you haven't tried the Whole Foods Brand Mini Dark Chocolate Chunks, try them in this recipe. To die for! The first time I made these I used unsalted butter and got a crunchier cookie (my preference). The next time I used I Can't Believe It's Not Butter because we were out of regular butter. This resulted in a chewier cookie (the kids' preference). Either way they are a winner. And BTW, hubby just likes chocolate chip cookies, so both versions were to his liking ; ) !!!

Cherry Crunch

Wonderful, my husband could not stop talking about it! Very nice way to use up a can of pie filling that was about to expire. I added a touch of almond extract as others had suggested, and used whole wheat pastry flour in place of all-purpose. Will definitely make it again!

Muenster Chicken and Mushrooms

Really good. I did the egg instead of milk like others, and used italian bread crumbs. Used chicken breast tenders and it was so moist, juicy and tender that we didn't even need knives. Served with brown rice. The kids liked it too and they're not too picky but they are kids nonetheless and they kept saying how good it was. Next time I'll add a little garlic.

Banana Wheat Muffins

Wonderfully moist! And love that recipe calls for items that most of us have on hand. The only things I did different was use 2 cups of whole wheat pastry flour instead of the two flours, and added 1 teaspoon of pumpkin pie spice for flavor. Next time I may add more spice (maybe a 1/2 teaspoon of cinnamon). These will be our regular banana muffins from now on.

Italian Spaghetti Sauce with Meatballs

My whole family loves this recipe. The only thing I did different was use half pork/half ground beef for the meatballs, and add more spice to the sauce. Made extra meatballs and sauce to have in the freezer. Took some to my ma and she said the meatballs were the best she's ever had. Thanks for sharing!

German Lemon Cake

Loved it. My father-in-law gave us a huge box of lemons from his tree and so I made lemonade and this cake! Didn't use the rum, otherwise followed the recipe. Thanks for sharing

Zucchini Pineapple Bread II

My family & I loved it. Substituted wheat pastry flour for the reg. flour and turbinado sugar for the reg. sugar and it turned out GREAT! Such a moist bread. I'm making this my regular recipe!

Easy Garlic-Lemon Scallops

We were going to have Chinese takeout tonight and while looking over the menu, I thought scallops in garlic sauce sounded good. Then I realized we had scallops in the freezer and decided to make this recipe. It's great! We added some broccoli after the scallops cooked and sauteed it a bit and it tasted wonderful. Next time we may add some shrimp and use asparagus instead. Try this simple recipe, it will bring out your creative side!

One Dish Chicken Bake

We really liked this one and it's so easy. Great flavor and all the ingredients were at home! I cooked brown rice and served it on the side but we ended up mixing it in with everything else once we dished up. Good with fresh asparagus. YUMMY!

Swiss Steak Quick and Easy

This one's good. I made it one night right before we left for hockey and let it simmer for about 90 minutes on low. We returned home to the wonderful aroma, made some noodles, and devoured it! But the best part about it was the leftovers........um! I had it for lunch the next three or so days and it was fantastic.
