Soft Giant Pretzels

I made mine in my Kitchen Aid. I lowered the uncooked pretzels into the boiling water on a spatula so that they wouldn't get stuck to the bottom or be hard to get out. It worked perfectly. I brushed with egg-wash glaze and sprinkled with salt before sticking them in the oven. They are delicious! Very soft.

Pie Crust III

After ruining a ready pie crust in the middle of preparing a steak and ale pie, I scrambled to find a crust that would be quick and that didn't involve shortening or butter (as I was out of both). I whipped this up in 10 minutes flat. As I stuck the pie in the oven, I was convinced that I had ruined the whole dish. I didn't have time to read the other reviews, so I followed the recipe exactly. After eating his dinner, my husband proclaimed that I should be making the crust myself from now on, as mine was better than Pillsbury.

Best Basic Sweet Bread

Fantastic, simple recipe. The bread is sweet, but not too sweet. I add 1 tsp "ground mixed spice" and about 1/2 to 3/4 cup of dried peel and cranberries to make the PERFECT Hot Cross Buns. My Brit ex-pat tells me they're closer to the real thing than any other recipe.

Melting Biscuits

Delicious! My British ex-pat husband requested that I mix oats into the dough. I add about 3-4 handfuls at the very end. I also add an extra tablespoon cornstarch to make them crispier. And because of the extra cornstarch and oats, I end up having to add a tablespoon of milk.

Mushroom Orzo

I used frozen mushrooms, frozen pearl onions, and added some extra frozen chopped spinach. It was delicious despite all of the frozen ingredients. I also used whole wheat orzo. Even my husband liked it and said he would eat it again.

Pumpkin Cookies VI

Added extra oats, ginger, chocolate chips, and cooked for 16 minutes. The cookies still fell apart when I tried to pick them up. They don't taste that fantastic, either. When you have to alter the recipe so much in order to get something edible, you're not using the same recipe anymore. I won't be making these again.

Creamy Vanilla Ice Cream

This was ok. It turned out a little icy, instead of purely creamy, but I'm not sure if that was a problem with my ice cream maker. I added Heath Bar, Reeses peanut butter cups, and chocolate chips. I'll probably keep looking for the perfect ice cream base.

Honey Roasted Red Potatoes

YUM! The only thing that I changed (because of concerns raised by other reviewers) was to add 1 tsp of Worcestershire sauce to the honey mixture. It was perfect--the potatoes were tender and crisp with a little kick. Thanks!

Scottish Shortbread II

So tasty!!! My British husband wished that I had sprinkled sugar on top (as one reviewer recommended), but I liked it less sweet. Fabulous texture if kept in the refrigerator (they tasted fresher than the ones that were left out). I mixed by hand. We'll definitely make this again and again!

Bread Pudding II

Holy-square-dish of deliciousness! YUM! I used a smallish french baguette (about 12 1-inch slices) and 1/4 cup white sugar plus 1/4 brown sugar. Did I mention how scrumptious it was? And it was so easy to make!

Ground Beef 'n' Biscuits

My husband loved this recipe. I usually hate peas, but I really enjoyed this recipe, too. I made a half recipe for just the two of us. To the ground beef, I added 1 tablespoon of Worcesteshire sauce, 1 tablespoon katsup, and a 1/2 tsp chili powder. This is a quick, satisfying meal. Thanks!
