About this Cook
I have been happily married to a wonderful man for almost seven years. We have no children as of yet, but we do have four dogs, who I treat as my babies. I am the oldest girl in the family, so my mother instilled in me the importance of being able to take care of your house, which includes cooking. The region of the Philippines that I am from is known for their cooking, so I'm proud to think that has rubbed off on me.
My favorite things to cook
I love to bake especially during the fall and winter seasons. I like to try new recipes that is why I LOVE this site! I have been on a soup kick lately, so I have been trying a variety of recipes that I have to say has passed my husband's tast test. I have been bringing any extras to work and everyone has had nothing but positive feed back.
My favorite family cooking traditions
My favorite cooking tradition is my mom or I making Turkey a la King every year after Thanksgiving to get rid of the leftover turkey. We only make it once a year, so it's always so good to me. The recipe that is like a family heirloom is my mother's recipes for lumpia (Filipino eggrolls), and her BBQ chicken on a stick recipe. She made them up herself and they are fabulous!
My cooking triumphs
I have this sickening fetish about trying to always top my husband's favorite dishes that come from a restaurant, a bakery....or his mother. So far I have topped his mother's banana pudding, Chili's enchilada soup, what used to be his favorite fried rice, and Archer's Molasses cookies. He might be saying that I topped it just to shut me up, but I take it as a win.
My cooking tragedies
One time I tried making sweet corn tamales from scratch. That was painstaking and an utter disaster.I even made my own masa! I would never do that again. I ate the darn things just because of the principle of the matter; I slaved over them! They were awful!

Kickin' Collard Greens
This is such an easy, flavorful recipe. My husband is from the south, and I never made greens until I found this recipe. He was so impressed! He said it trumped his momma's! I'm always looking to do that!

Microwave Oven Peanut Brittle
I didn't think this was possible, but here it is! This was a very good and super easy for Peanut Brittle. I think the only thing I did wrong was grease the cookie sheet too much. I thought it would need it, because of all the sugar and corn syrup, but it doesn't. I won't use as much the next time around. I had to wipe off the brittle once it hardened. An unecessary step.

Darra's Famous Tuna Waldorf Salad Sandwich Filling
This is such a fresh, and filling tuna sanwich filling. At first when I saw there were apples, and nuts in it I was skeptical, but it is so delicious! You have to try this! This will be on my menu during the warmer months, especially during Lent!!
