Quinoa Black Bean Burgers

This is one of my new guilty pleasures. The caramelized onions take this over the top. I add different heat every time I make these. LOVE THEM!

Julia's Watermelon Gazpacho

I really liked this as a base recipe. I wanted to use the entire watermelon, so I sort of did this in batches. I used 2 whole jalapenos, one red, one yellow pepper, agave nectar, red onion, blended and tasted as I went alone. I saved some of the gazpacho and made ice cubes out of it. This is great for presentation, and keeps it nice and cold. Love it!

Jalapeno Popper Mushrooms

Smokin' Scovilles Turkey Chili

I really like tgis recipe. My modifications, I used a half tablet of Mexican Abuelita Chocolate, 2 jalapenos, fresh corn, adobo sauce from a canned jar. Great depht of flavors!

Pumpkin Black Bean Soup

I love his soup. I made a few additions. I sauteed a combination of onions, celery and green pepper instead of just onions. I left them a bit al dente. I added cumin, and a sliced jalapeno. Also added some fresh corn that I put in at the end. SO GOOD! Next time I am going to do pancetta.

Asian Beef with Snow Peas

I love this sauce, I double it, and add whatever I have on hand. I have also made it with chicken. Also great. I add more ginger, double the sauce ingredients, and go from there.

Rajas Poblanas (Poblano Strips)

Great. I did what I always do with my Mexican recipes, and added 1 smoked poblano in adobo, and some cilantro. Love it. Next time, I will add some pepperjack cheese and reduce the cream cheese.

Artichoke Spinach Lasagna

Just made this for the second time because my friends kept asking for it. I used no cook noodles, fresh basil instead of rosemary, italian cheese blend for the mozzarella, and added chicken breast. WOW!

Zucchini Brownies

OMG, are these ever good. I followed the ingredients to a T, and it turned out great. Next time I make this, I will let the brownie part cool for about a half a day, then put the frosting on them and let them sit in the fridge overnight. Trust me, after they sit for a day, they can't be beat. Have no idea why some people complained about a veggie after taste.

Incredibly Cheesy Turkey Meatloaf

I tried this after all of the reviews because I love turkey meatloaf. I think if you are 12 you will like this. It tastes like the turkey equivalent of boxed mac and cheese. And you really can't eat it cold on sandwiches. Just did not like this one. Will stick with the traditional.

Good Old Fashioned Pancakes

I love this recipe. Simple, and always perfect. I make this for myself, so I have tried saving some batter for another day. It is much better when you use it right away. I have tried adding fruit, and my favorite so far was raspberries.

Refried Beans Without the Refry

I make these a lot. I have made with water, and with chicken broth, and there is no mistaking that the broth is best. I always use cumin, and chili powder, and when cooked and ready, I use a large spoonful of Goya's Manteca. The flavor this adds in unreal. In Mexican households, that is the way to do it.

Tomatillo Salsa Verde

I had to cater a Mexican BBQ for 60 people, and wanted to give them authentic salsas instead of the usual. This was one of them. Even people who thought it was guacamole, (yes, there were a few), and ones who never had it, loved it. Not as hot or spicy as you might expect. It is so fresh tasting with all the great things that go into it. I had jalapeno, so that was what I used. I had leftovers, and have been using it all week. Froze some in individual bags for future. Try it.

Banana Banana Bread

I have been looking for a staple banana bread recipe, and I think this is it. I wanted to add something, so I put in a handful of golden raisins. They were great! I also put o cream cheese icing that I made with just 3 ounces of cr/cheese, sour creme, and the juice of half an orange. Wow. Try it!

Fajita Marinade I

Marinated Flank Steak

I just started catering small parties and I planned a fajita bar because of the tight budget. I WILL NEVER USE ANOTHER MARINADE FOR FAJITAS AGAIN. It was the BOMB! The comments were awesome and the crowd of 60 clapped when they were finished. I served alongside the roasted tomato salsa from this site, frijoles a la charra, salsa verde, and a jicama salad. What a hit. I did add lemon slices and put them in with the marinade and he meat. Only change I made.

Mexican Corn on the Cob (Elote)
