Chicken with Garlic, Basil, and Parsley

Reviewed: Feb. 6, 2008
I took advice from some of the "most helpful" reviewers: I mixed about 3/4 cup chicken broth and 3 tablespoons balsamic vinegar, the spices and garlic all together then MARINATED the chicken in this mix for a couple hours before baking. In the last 20 min of baking I added chopped tomato, red onion, feta, fresh basil, a squirt of fresh lemon juice right before serving. The chicken was SO JUICY and delicious! My hubby who isn't a huge chicken fan had THIRDS!! Thanks so much to the original poster and all the helpful reviewers too!

Simple, quick, easy and best of all DELICIOUS! I substituted fresh garlic, fresh chopped tomatoes instead of canned, and also added in some chopped mushrooms. Served over rice. Everyone loved it and there were no leftovers! :)

Slow Cooker Beef Stroganoff I

Excellent! I added some fresh chopped mushrooms to the mix, and I accidentially forgot the cream cheese but the recipe still came out FANTASTIC! Thanks for a great slow cooker recipe. :)

Happy Shrimp

Reviewed: Apr. 4, 2009
This recipe was quick, easy and tasty! I added some mushrooms because I love them (used about 250 g for 3 servings), and I doubled the tomato. I served the recipe over angel hair pasta. It looked and tasted like it came from a restaurant! This recipe made me and my husband very happy, thanks "proudwife"! :)

Feta Cheese and Bacon Stuffed Breasts

Reviewed: Jan. 18, 2007
This recipe is FABULOUS! The flavors go very well together. My family loved it, and there were NO leftovers! The only thing I did differently from the original recipe was marinate the chicken breasts in the olive oil / garlic / oregano / lemon juice for a couple hours before stuffing and baking. Otherwise I kept everything else the same, wouldn't change a thing!

Artichoke Chicken

Reviewed: Jan. 24, 2007
EASY and YUMMY! Thanks so much!! I followed advice of others and did 1/2 mayo, 1/2 sour cream in the artichole mixture b/c I am not a big mayo fan. I also added about 1 lb chopped fresh mushrooms to the artichoke mixture as well. My husband already asked when we're going to have this again! :)

Chicken with Mushrooms, Prosciutto, and Cream Sauce

Reviewed: Apr. 4, 2009
Very tasty! I only made a few minor changes: I added one onion (sliced), doubled the amount of mushrooms, and laid both on the bottom of the pan before putting chicken on top to bake. I also used garlic powder b/c I didn't have any fresh garlic on hand, and the flavor came through just fine. I also pPut a little bit of flour in the sauce to thicken a little bit. Also, if you use chicken breasts, don't forget to cut your bake time to 20-30 minutes. Thanks again for a yummy and quick recipe!

Angel Hair Pasta with Shrimp and Basil

Reviewed: Feb. 24, 2009
I followed the advice of some of the other reviewers and I doubled the pasta, garlic and shrimp. I also did not add the shrimp during step 2, I added it to the simmering sauce in step 3. Overall this recipe was quick, easy and tasty! Thanks PAL :)

Lamb Chops with Balsamic Reduction

Reviewed: Feb. 25, 2007
This is DELICIOUS! I used 4 lamb filets, and *quadrupled* the amount of spices to make a nice flavorful crust on each side. I also poured a little garlic olive oil on each filet after the spices were rubbed in and let that sit for 15 min. I added about 1 tsp of sugar to the vinegar to cut back a little on its pungent taste. The sauce takes a little longer than 5 min to reduce (at least 1o min) but it is so WORTH it. Thanks for a great recipe!

Shrimp Scampi Bake

Reviewed: Nov. 5, 2008
This recipe was SOOO quick but tasted SOOO good! I used frozen shrimp (thawed and drained first), *slightly* less Dijon, a little more garlic (1 clove for each serving), and a splash (1/3 to 1/2 cup) white wine. Keep an eye on the cook time though, my shrimp were done around 8 - 10 minutes. This recipe is definitely a keeper for busy weeknights, or even for company! Thanks, Kimber!

Creamy Spinach Tortellini

Reviewed: Nov. 5, 2008
Yum! This recipe was easy and tasted GREAT! Even my husband who is not really a fan of vegetarian meals had seconds! There are no quantities listed for the tomatoes and mushrooms but I used 1 lb of each (with 1 lb of pasta) and I think those was the perfect amounts. I also used spinach tortellini and the spinach pasta plus the spinach in the sauce was YUMMY (and not too overpowering). Thanks so much Jen for a quick, easy and TASTY recipe!

Honey Glazed Ham

Reviewed: Apr. 17, 2009
I have never made a ham before and this came out perfect! My hubby said it was the best ham he's ever eaten! :) I followed "Mazzo"'s review and used 1/3 C butter, 1/2 C brown sugar and 1/4 C honey for the glaze. I also put some sliced carrots in the baking pan with the ham so they got some of that honey-sugary flavor too. I don't even really like carrots but I ate them all. YUM!!!! Thanks, Colleen, for an awesome ham recipe I will be sure to use again and again!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Oct. 21, 2008
I doubled the mushrooms and used a sprinkle or two of flour near the end to thicken the sauce but otherwise left evrything else as is. Goes great with string beans and mashed potatoes. Yum! Thanks, Colleen, for a verrrrrry tasty chicken recipe! :)

Cheddar Baked Chicken

Reviewed: Jul. 10, 2007
This came out much better than expected! The coating is yummy and really seals in the juices so the chicken comes out nice and juicy and flavorful. Watch the baking time though, I used thin pieces of chicken and it only had to bake for 30 min.

Fish Fillets Italiano

YUMMY! This dish is so tasty even non-fish lovers will like it! :) Based on some others' suggestions, I added some chopped fresh mushrooms to the mix, and sprinkled some Italian seasoning and parmesean cheese to the pan as the fish simmered. Thanks Bonnie for a yummy recipe!

Spicy Garlic Lime Chicken

Reviewed: Jul. 11, 2008
DELICIOUS! Based on others' suggestions, I pounded the chicken breasts til they were about 1/4 - 1/2 inch thick. I also doubled the butter and lime juice to have more sauce to baste the chicken as it was cooking. The chicken came out very moist, tender, and flavorful. Thanks for a quick and tasty recipe!

Balsamic Chicken and Fresh Mozzarella

Reviewed: Jul. 17, 2007
This recipe is DELICIOUS . . . a wonderful combination of flavors! Based on other reviewers' suggestions, I baked the chicken instead of pan frying. I also chopped the tomatoes and basil and heated them in the micro for a couple mins before putting on top of the chicken to serve. This recipe is now definitely part of my rotation. Thanks!!!!

Flip Flop Grilled Chicken

Reviewed: Jul. 27, 2007
This was verrrrrrryyy flavorful and moist! I substituted olive oil for butter due to dietary restrictions & I also marinated the chicken for a few hours. My grill ended up being "out of order" today so I baked the chicken in the oven instead . . and it still came out wonderfully. Thanks for a great recipe!!

Cousin Cosmo's Greek Chicken

Reviewed: Jan. 18, 2008
I LOVE this recipe! It is healthy, easy to make and verrrrrry tasty! To make prep a little easier / faster, I skipped step 1. I first pounded the chickens flat, then laid them on the work surface. I scooped the feta right on the chickens, squeezed some fresh lemon juice on top, sprinkled with oregano, then folded and secured with toothpicks. I omitted the flour and chicken boullion and used chicken broth instead of water for the sauce. I used cherry tomatoes (quartered), and didn't add spinach til last two minutes or so, so it doesn't get too soggy. I will make this again real soon. Thanks, Cousin Cosmo, for a delicious dish!
