Grandma's Chicken Chardon

Reviewed: Apr. 16, 2008
EXCELLENT combination of flavors! I followed some of the other reviewers' advice and doubled the butter, lemon and mushrooms, plus added minced garlic cloves to the mushrooms (I used 4 cloves for 4 servings, but I LOVE garlic!). Right before serving, sprinkle some more parm cheese and lemon juice on the chicken. YUM!!!

Simple Beef Stroganoff

Reviewed: Apr. 15, 2008
I used all of pizzafreak's suggestions in her review. I've tried a few stroganoff recipes in the past but this one is the most flavorful by far, yum! Thanks Brenda and thanks Pizzafreak :)

Baked Soy Lemon Chops

Reviewed: Mar. 9, 2008
This recipe came out great! The trick is in the marinating, the longer the better! Also, baste often, at least 3 times. This also allows you to keep an eye on the chops while baking, so you don't overbake. The only change I made to this recipe was to cut the soy sauce in 1/2. The pork came out tender, juicy and tasty. Thanks for a great recipe!

Braised Lamb Shanks

Reviewed: Mar. 9, 2008
Based on the other reviewers' advice, I only used 1/2 of the balsamic vinegar. The resulting flavor was PERFECT!! The lamb was so tender and juicy, and the sauce goes great on top of mashed potatoes :) . Just keep an eye on the lamb while it is baking so you don't overcook it, mine was done in 2.5 hours, not 3.

Best Beef Stroganoff

Reviewed: Feb. 13, 2008
Based on other reviewers' comments, I cut the onions in half and added more garlic. I also browned the meat before cooking the onions. The house smelled WONDERFUL when I was cooking but the stroganoff itself seemed a little bland. I will try this again, varying the quantities of the ingredients and see what happens.

My Chicken Milano

Reviewed: Feb. 7, 2008
This is very easy, quick, and tasty. And only one pot to clean - yay! I made the recipe with the following changes and it still came out great: I used canned beans b/c I didn't have any frozen, and 3 tomatoes I chopped up myself b/c I didn't have any stewed. I also added about 1/2 c of white wine to the skillet during simmering. Will definitely make again. Thanks Nicole for a great recipe!

Chicken with Garlic, Basil, and Parsley

Reviewed: Feb. 6, 2008
I took advice from some of the "most helpful" reviewers: I mixed about 3/4 cup chicken broth and 3 tablespoons balsamic vinegar, the spices and garlic all together then MARINATED the chicken in this mix for a couple hours before baking. In the last 20 min of baking I added chopped tomato, red onion, feta, fresh basil, a squirt of fresh lemon juice right before serving. The chicken was SO JUICY and delicious! My hubby who isn't a huge chicken fan had THIRDS!! Thanks so much to the original poster and all the helpful reviewers too!

Shrimp and Feta Cheese Pasta

Reviewed: Jan. 31, 2008
Based on some of the other reviewers, I increased the amounts of everything (except the pasta and feta) by a half. The wine I increased a little more. I also added some corn to the mix at the end. Thanks for the yummy recipe!

Cousin Cosmo's Greek Chicken

Reviewed: Jan. 18, 2008
I LOVE this recipe! It is healthy, easy to make and verrrrrry tasty! To make prep a little easier / faster, I skipped step 1. I first pounded the chickens flat, then laid them on the work surface. I scooped the feta right on the chickens, squeezed some fresh lemon juice on top, sprinkled with oregano, then folded and secured with toothpicks. I omitted the flour and chicken boullion and used chicken broth instead of water for the sauce. I used cherry tomatoes (quartered), and didn't add spinach til last two minutes or so, so it doesn't get too soggy. I will make this again real soon. Thanks, Cousin Cosmo, for a delicious dish!

Romaine Rice Tuna Salad

Reviewed: Nov. 29, 2007
I was intrigued by this recipe since it didn't contain a bucket of mayonaise like most other tuna salads. OH MY GOODNESS! So quick and easy to make, and what a *fabulous* combination of flavors! I used fresh spinach and iceberg lettuce b/c that's what I had, I also threw in a small jar of seasoned feta cheese and a box of cherry tomatoes (halved so the juice mixes with everything else). It's a great recipe to customize to your own tastes. I just finished eating this for dinner so I am full now but I can't wait to have this again for lunch tomorrow! Thanks for a great recipe!!

Flip Flop Grilled Chicken

Reviewed: Jul. 27, 2007
This was verrrrrrryyy flavorful and moist! I substituted olive oil for butter due to dietary restrictions & I also marinated the chicken for a few hours. My grill ended up being "out of order" today so I baked the chicken in the oven instead . . and it still came out wonderfully. Thanks for a great recipe!!

Balsamic Chicken and Fresh Mozzarella

Reviewed: Jul. 17, 2007
This recipe is DELICIOUS . . . a wonderful combination of flavors! Based on other reviewers' suggestions, I baked the chicken instead of pan frying. I also chopped the tomatoes and basil and heated them in the micro for a couple mins before putting on top of the chicken to serve. This recipe is now definitely part of my rotation. Thanks!!!!

Good recipe! I added some red wine to the pan for the steaks to simmer in at the end (but I think I simmered too long!). Make sure to watch the time! :)

Tomato Chicken Parmesan

Reviewed: Jul. 12, 2007
Based on all the reviews I expected this dish to be out of this world. Unfortunately me and my family thought it was just "OK". In fact, the fam. prefers my own chicken parm recipe where I don't use breading at all, and put the sauce on top of the chicken and not underneath. Go figure.

Cheddar Baked Chicken

Reviewed: Jul. 10, 2007
This came out much better than expected! The coating is yummy and really seals in the juices so the chicken comes out nice and juicy and flavorful. Watch the baking time though, I used thin pieces of chicken and it only had to bake for 30 min.

Pan-Fried Steak with Marsala Sauce

Reviewed: Jul. 5, 2007
I cooked the steaks for a lil less than suggested at first. I added onion and fresh mushrooms to sautee with the garlic. Then I put the steaks back into the pan to simmer on low with everything for a couple minutes. Very tasty & juicy. Note: If you are going to add mushrooms and other things, you might want to double or even triple the sauce.

Chicken Tetrazzini IV

Reviewed: May 11, 2007
This recipe was OK, but not very flavorful. I doubled the sauce like many reviewers suggested. I also added some chopped onion & garlic and used fresh mushrooms instead of canned but I still thought the overall taste was a little bland.
