Make Ahead Breakfast Casserole

Reviewed: Aug. 18, 2014
This is delish and fun to make! I added a pound of crumbled bacon. I used fresh spinich that I sauteed in a bit of bacon grease, then drained on paper towels. Then I browned the sausage and part way thru I browned fresh mushrooms. Because of adding the extras I used 6 eggs. This was loved by all at our Sunday brunch for just 4 and we are having left-overs for dinner tonight! I will be making this again. Very good! I served this with shredded hash browns and fruit salad.

Irish Bacon And Cabbage Soup

Reviewed: Mar. 18, 2014
I love to make soups and make most of my soups in the slow cooker and will try this sometime again by that method. I made this on the stove top and really changed somethings because of time after working till 5pm on St Patricks Day. I was making Rubens ( had just made Cabbage Rolls) and wanted something with them. I must have Irish food! I chopped and cooked 12 oz of pepperedbacon. When bacon was alomost done I addded a chopped onion, garlic and the sliced cabbage and sauted. Added the diced tomatoes. To save time i added 2 cans of loaded baked potato soup and simmered. Adding chicken broth to reach the right thickness. Really a huge cheat BUT really good! Went great with the Rubens and I cant wait for lunch today for leftovers!I will make this again! Thanks!

Artichoke Salsa

Reviewed: Mar. 3, 2014
This was just OK. It is missing something and I'm just not sure what it is. We had it on salad and with tortilla chips. Very good on salad but needs to be chunkier on salad. I used the food processer as other reviewers suggested. We love artichoke hearts but this was a bit dissapointing.I used italian sessoning instead of fresh basil and this may have been the problem. Will try it again when I have the fresh basil growing outside my door!

Slow Cooked Ham and Potato Chowder

I love to make crock pot soups and this one is a keeper and a nice change from my usual potato soup. I used chicken broth instead of water and bullion and added carrots. I also added 2 cans of cream of chicken soup.

Easy Sour Cream Cheesecake

Reviewed: Jan. 20, 2014
This easy & quick to put together cheese pie is a keeper! Made as stated but I did add a sprinkle of cinnimon to the mixture. It made too much to fit in one pie pan so I baked 2 ramikins too. I used a graham crust and added blueberry pie filling on top when served. I love to make cheese cakes but my kitchen is very small so my springform pan is packed away. This is much better then the fluffy pies I make. More like cheese cake. Will make this agin! Company worthy.

Buffalo Chicken Stuffed Shells

Reviewed: Jan. 14, 2014
Very good and easy. I actually made mine with left over turkey. I did not chill mine for 3 hours. Sprinkeled fresh blu cheese on top when serving and I like spicey foods so I also splashed with extra wing sauce. Served with salad with blu cheese dressing. This really would be a great addition to the buffet on game days. Will be making these again.

Cheeseburger and Fries Casserole

Reviewed: Oct. 22, 2013
Very good & easy! I used 2 cans of cheese soup and omitted the mushroom soup. Extra garlic. I had no problem with soggy french fries. When serving I gave a swirl of mustard & katchep and sprinkeled chopped dill pickel, just like a fast food burger! Very good and great left-overs.

Bacon Wrapped Green Beans

Reviewed: Oct. 7, 2013
Very good and easy BUT they took MUCH longer to cook so the bacon is done and what a mess on the pan. I will leave extra time and use foil lined pan or parchment paper next time. Will make again.

Chunky Tomato Potato Soup

Reviewed: Apr. 10, 2013
This is very good as is but there are lots of goodies you could add. I like it because it has to be a healthy soup without meat and all those good veggies. I do think it would be good with smoked sausage. I made this in the crock-pot, cooked it all day on low. When I got home from work I added the mixed milk and cornstarch. Then turned in on warm till we were ready to eat. Would be great with a gormet grilled cheese sandwich!

Chicken Fiesta Salad

Reviewed: Mar. 6, 2013
This is a keeper! Very simple & good! I coated chicken tenders and made the bean mixture the night before. This is great in a soft or hard shell. The chicken is very good with the seasoning and will make this alone too! Thanks for the great new meal!

Rita's Spinach Casserole

Reviewed: Feb. 27, 2013
With a few changes this was very good but would be way too dry with only 15 oz. of sauce. I used 28 oz. and it needed more. I added chopped onion & garlic while browning the ground beef. When I added the sauce I added Italian seasoning & black pepper along with the thyme. Sour cream really makes the sauce very good and different. I may use a can of mushroom soup sometime. I used 2 cups of cheese. I love the spinich! I made this the night before so it was already to pop in the oven when I got home from work. Will be making this again. Thanks.

Tomato Basil Pasta

Reviewed: Jul. 23, 2012
Very good! I did make some changes but the over all recipe is great. I used red & yelllow tomatoes & more fresh basil. I had left-over spaghetti from the night before so I used that instead of sprials. I also used Greek vinigerette dressing instead of olive oil. I added a cuke too. I will make this again with tomato season just getting starting here in PA. The yellow tomatoes really made it pretty too!

Really surprised how good this is! I love making soups and usually make soup in the crock pot with lots of goodies and that means lots of chopping! Not this time! I did makes some additions such as diced smoked sausage and a can of corn and I sauteed an onion with the sausage. Added lots more milk and a packet of dry chicken gravey mix. I often add this to soup for flavor and gives it some body. I will be making this again! Thanks!
