Make Ahead Breakfast Casserole
This is delish and fun to make! I added a pound of crumbled bacon. I used fresh spinich that I sauteed in a bit of bacon grease, then drained on paper towels. Then I browned the sausage and part way thru I browned fresh mushrooms. Because of adding the extras I used 6 eggs. This was loved by all at our Sunday brunch for just 4 and we are having left-overs for dinner tonight! I will be making this again. Very good! I served this with shredded hash browns and fruit salad.

Irish Bacon And Cabbage Soup
I love to make soups and make most of my soups in the slow cooker and will try this sometime again by that method. I made this on the stove top and really changed somethings because of time after working till 5pm on St Patricks Day. I was making Rubens ( had just made Cabbage Rolls) and wanted something with them. I must have Irish food! I chopped and cooked 12 oz of pepperedbacon. When bacon was alomost done I addded a chopped onion, garlic and the sliced cabbage and sauted. Added the diced tomatoes. To save time i added 2 cans of loaded baked potato soup and simmered. Adding chicken broth to reach the right thickness. Really a huge cheat BUT really good! Went great with the Rubens and I cant wait for lunch today for leftovers!I will make this again! Thanks!

Artichoke Salsa
This was just OK. It is missing something and I'm just not sure what it is. We had it on salad and with tortilla chips. Very good on salad but needs to be chunkier on salad. I used the food processer as other reviewers suggested. We love artichoke hearts but this was a bit dissapointing.I used italian sessoning instead of fresh basil and this may have been the problem. Will try it again when I have the fresh basil growing outside my door!
