Frank's® Red Hot® Buffalo Chicken Dip

I love this recipe. I spread the uncooked dip on pizza dough and then I cook it in the oven with shredded mozzarella on top. Voila!, my own buffalo chicken pizza! My family constantly asks for it. I do cut the cream cheese down to 4-6 oz., I've found it had too much. And I've used both swanson chicken and rotisserie chicken, both work, but the rotisserie can come out dry.

Barbecued Shrimp

OMG!!! WOW, this was good! I scaled down the servings to 2 and only cooked it with a pound of shrimp, there was a lot of sauce left over. I just don't know if I'd call it BBQ shrimp, more like spicy shrimp maybe? But if you like spicy, this was excellent. The tangy lemon flavor really was evident amidst the spices... this was sooo yummy.

Potato Croquettes

I had this in my recipe box for years before I tried it. I already had cheddar cheese in my mashed potatoes and fresh chives, and no bacon. Fried them in olive oil. They came out great, yummy, and very tasty... But alot of work.(standing over the stove frying...ughh!) I'll only make them for a special occasion.

Crispy Coconut Chicken Fingers

This came out very yummy. I greased the bottom of the pan with butter. And I didn't have enough apricot preserves, so I used some honey. I also only had regular yellow mustard, so I just used a few squeezes in the apricot preserve/honey mixture. It was still very good. A new idea to boring chicken and easy too.

Raspberry Almond Muffins

They came out blue!! I won't make these again. They came out good enough to eat, but something about the raspberries turning blue, just turned me off.

Italian Biscotti

My mom told me this recipe is very similar to my full Italian grandmother's biscotti recipe. They came out great. I brought them to an office breakfast and the whole tray was inhaled. I needed to toast the cookies longer than suggested in the recipe and I could've toasted them longer which I think I'll do next time. It does make a lot of cookies.
