Feijoada

I haven't made this but while I'm sure this tastes very good, it's not authentic Brazilian. I am Brazilian and we don't ever put tomatoes, jalapeƱos or cayenne pepper in our feijoada. JalapeƱo and cayenne aren't even sold here except in very exclusive markets with imported food and they cost a fortune. Serve with oranges, collard greens, hot sauce, white rice, mandioca frita (fried yuca) and farofa (manioc flour) with pudim de doce de leite (caramel flan) for dessert. :)

Butter Snow Flakes

I ommited the zest and cinnamon and made the batter as directed. Then I divided the batter in two and added red food coloring to one half and 2 tablespoons of cocoa powder to the other. I sprinkled coarse sugar over the cookies and baked them as normal in a heart shape. Finally, I assebled bicolor sandwich cookie with nutella inside. I think my husband is buying me jewelry tomorrow! :)

Slow Cooked Barbecue Beer Beef

Unfortunately I had to omit the sugar, beer, cornstrarch and buns (Atkins) and used zero carb ketchup and this was still amazing straight out of the crockpot. Can't wait to try the original recipe!

Simple White Cake

I make this all the time and my kids love adding to the basic recipe to create new cupcakes. Today we mixed two tubes of mini M&M's to the batter and added a full teaspoon of dulce de leche to each cupcake center before putting it into the oven. This was the best version yet. Beautiful and with the caramel filling... it was to die for! :) obs- I spray a plate with PAM and drop little teaspoons of dulce de leche into it before popping it in the freezer for half an hour. This makes it easier to just throw into the batter once you fill the cupcake pan. It also won't melt so you don't end up with a pool of dulce de leche in the bottom as opposed to in the center.

Mulligatawny Soup I

Very good. I really wanted to try this even though I didn't have all the ingredients on hand, so I adapted a bit. I chopped the onion and carrots in a food processor in a bit of olive oil, leaving out the celery because I didn't have any. I also left out the chicken and apples, and substituted the heavy cream for coconut milk to make up for the sweet taste of the apple. This was still sooooo good. I plan to make the original recipe after I go grocery shopping this week! :)

Bacon Wrapped Hamburgers

These were really flavorful and juicy. I used mozzarella cheese because that was all I had. I just threw everything but the meat in my food processor and mixed it with the meat. I also chopped the bacon separately, cooked it and added that to the mixture. I used a pancake mold to shape these into hearts, and popped them in the freezer for a little while before grilling so it wouldn't fall apart. My picky husband loved it!

Easy Morning Glory Muffins

These were delicious. I just chopped the apples and the carrots together in my mini food processor and it wasn't time consuming at all. Plus, it made the muffin more appealing to my picky 3 year old, who might have been discouraged by the carrot chunks! 2 cups= +/- 3 medium carrots UPDATE- For those doing WW, this is 10 points each if you make 12 muffins and copy the recipe word for word. If you omit the walnuts (10.5 points) and use 1 cup of applesauce (2 points) instead of 1 cup of oil (57 points!!!) that will bring each muffin to 4 points, and it's still just as delicious. I love grabbing one of these for a healthy breakfast just before running out the door. :)

April Fools Berry Soda

Delicious. As a child, I had fruit in my jell-o all the time, mostly diced apples in strawberry gelatin. This is a fun way of serving an old favorite to my kids.

Lobster Pasta

I've done this twice in 3 days. I had my mom in law over for dinner and my husband loved this and asked me to repeat it today while having my dad over! And he doesnt even like pasta. I followed the recipe the first time and the second I didn't add lobster and it was just as good.

Hot Fudge Sauce II

yumm. this is very good. I did it a little differently though, using what I had. I used low fat heavy cream, salted butter and semi-sweet chocolate instead of unsweetened. I also used half a cup of sugar instead of a whole cup. The result was perfect, not too sweet. I also served it over brownies and vanilla ice cream. will make this again MANY times
