About this Cook
Growing up with a Polish-American father and a Mexican-American mother I learned to enjoy both simple comfort foods as well as spicy, flavorful Mexican dishes. No longer living at home I am currently a vegetarian seaking ways to create those same comfort foods and spicy flavorful dishes in a healthier way that I can be proud to share with family and friends. I hope to one day write a vegetarian cook book.

T's Sweet Potato Fries
To get the fries a bit more crispy they need to be cut rather thinly. This also helps them cook faster. To season I always add salt, pepper, and paprika, which gives it a nice contrast between the sweet and spicy. Sometime I add fresh rosemary or a tiny bit of chili powder to kick it up a bit more.

Sesame Udon Noodles
I made this tonight and it turned out really well. It's great because it doesn't take much time to prepare and you can use pretty much any veggies (fresh or frozen) that you have on hand. I would reccomend pouring a little bit of the dressing on at a time because it ended up being a bit to oily for me. That aside, a great recipe. Thanks!

Pesto Polenta Lasagna
This dish is great because it is quick and simple to make. I have made it three times and served it to people with completely different tastes and they all loved it. The third time I made it I added mushrooms, italian seasoning, and red pepper flakes to the sauce to give it a little more flavor. I will make this again!
