Tuna Salad Muffins

I really don't like tuna, but my husband loves it so i decided to try this recipe. He wasn't crazy about the muffins-he ate three of them because he was hungry but said it didnt think much of them. I was scared to even try them but they actually werent as disgusting as I thought. They reminded me of tuna casserole. So all in all, a so-so recipe. The best part of it was that my 1 year old really liked them, so i froze the leftovers for a quick, healthy lunch for her.

All-Dressed Pizza Muffins

These were actually pretty good. My husband loved them. They make a good quick lunch, especially for kids. Although i'd have to leave out the onions/peppers for my daughter, or she wont touch them! I think the one thing i might do to improve them would be to put a layer of cheese in the middle of the muffin (fill muffin tin halfway, put cheese, then fill the rest of the way) OR to put cheese on top of the muffin, as I coulnt really tell there was cheese in it because it was all mixed in with everything else. Overall a good, creative recipe and I will be making again. I think I'll experiment with different pizza "toppings"! Edit: After experimenting, the best way by far is to cube the mozzarella cheese (like 1/2 inch cubes). Also, its so much better if you omit the vegetables and put in sausage and pepperoni instead of ham.

Basic White Bread

I thought this bread tasted like English Muffin bread, but with more work. I made it by hand instead of using the bread machine, and i didnt have any bread flour so i used regular. This might have made a difference. It tasted good and was really good as toast or with butter and jam, but wasnt good for sandwiches which is what I made it for.

Breakfast in a Muffin

This is a really tasty muffin. My husband especially loves it. I use regular flour instead of whole wheat, and I added spices to the muffin batter (not the filling) because without its a little bland. I like to add sage and black pepper. Really good recipe!

Buffalo Chicken Wing Soup

This soup is the best! Ive been making it for years and everyone always loves it. A couple of suggestions: 1) Add potatoes (or other veggies of your liking) and extra chicken to make it bulkier (this might help the complaint some had of it being to thin.) 2) Cook the chicken in butter and hot sauce to infuse the chicken with flavor! 3) It's unneccessary to make this in the crockpot. Its just as good made on the stove-just cook it long enough for the vegetables (if added) to get tender. 4) Go heavy on the hot sauce! Its better with MORE!

Deep Dish Brownies

Yes, these are excellent. With the omission of 1 egg and half the baking powder, they were soft and fudgy. I had read a couple review about them not being chocolatey enough and also the butter being too overwhelming. As far as the chocolateyness-i melted about1/3 cup of chocolate chips with the butter, plus added chocolate chips to batter. They were VERY chocolatey-probably too much so for me. Next time i wont add choc. chips. Also, about the butter-they are very greasy. My lips were coated with grease after eating, but hey, who eats brownies when they are worried about eating something healthy? I substituted part melted vegetable shortening for some of the butter so butter flavor wouldnt be too much, also because i live in a tropical climate and baking with butter doesnt work out well here--always turns out a wierd texture. Shortenign works better. Give these a try, you'll like them.

Omelet Quesadilla

I make this often for my toddler. Its easy for her to eat and quick to prepare. I use real eggs and leave out some of the vegetables because she wont eat them. One tip is to put cheese on top and bottom of the egg so that the cheese sticks to the tortilla and holds it all together, or the stuff falls out.

Sour Cream Raisin Pie V

This was good, but if i were to make it again i would really reduce the sugar amount. It was way too sweet for my taste (and i have a sweet tooth.) But it was easy to make and turned out well. Best when eaten cold!!

Molly's Chicken

This was great, we loved it. I made it in the oven instead of crockpot and thought it turned out better. I pan fried the chicken first (though i dont think this was necessary). Then i mixed the sauce in the bottom of a casserole dish and laid the drumsticks in it. I added about 1 tsp of cornstarch to the sauce to help thicken. I baked (uncovered) at 350 for 30-45 minutes, turning the drumsticks in the sauce once during baking. The sauce really coated the chicken well and every bite was sticky goodness!One other thing is that I only had about half the amount of chicken and used the full amount of sauce and we had the perfect amount for putting over the rice.I imagine baking it in the oven produces less sauce than making it in the crockpot. The flavor was perfect, i used the called for amount of sugar and soysauce. My kids loved it!

Candy Cane Cookies from Gold Medal® Flour

I really liked the flavor of this cookie. It was very buttery and tender, like a really good shortbread (but mint flavored). But it was a very difficult dough to work with. It rolled out fine on a floured surface but when I twisted the two colors it was so fragile it kept breaking. After cooking it was the same; so tender that it broke and crumbled when taking off the pan. We ended up eating a bowl full of crumbles. I think a recipe like this needs a sturdier dough. If you do make it, keep the cookies small and stout so they are less likely to break. I ended up taking the remaining dough, making six mini-logs and combining into one large roll. Then I froze and cut into slices (about 3/4 to 1 inch thick), making circle pin-wheel shapes. These cooked up nicely and were SO much easier to do.

Easy Chocolate Bundt Cake Glaze
