After trying a recipe for pumpkin muffins from a magazine and being disappointed, I came to my favorite site to find another. I wanted more of a pumpkin taste to my muffins and although this recipe was for pumpkin bread, I used it to make muffins. After reading some of the reviews I also made some changes. I used brown sugar instead of white and added a teaspoon of vanilla. I also reduced the ground cloves to 1 tsp and skipped the nutmeg. I did find that 3 cups of brown sugar was a bit too sweet so next time I will use just 2 1/2 cups. Other than that this recipe ROCKS! I was able to make 24 muffins out of this recipe and even topped them with walnuts. I baked at 350 degrees for 25-30 mins. My muffins came out so moist and were exactly what I was looking for. I made these for my husband to take to work today and I know that they will be a big hit with pumpkin lovers. This is a recipe that is going into my permanent file.
