My favorite things to cook
I love to cook Italian dishes and Mexican dishes the most. My homemade spaghetti sauce is to die for!
My cooking triumphs
My first attempt at making chicken parmesan. It was a hit! Everything down to the bread crumbs for the chicken was made from scratch. I actually had it all done and warm at the same time! I can't even do that with your basic bacon and eggs on a Sunday morning.
My cooking tragedies
When I was younger, my Mom put me in charge of cooking the spaghetti sauce for the family. I put everything in the pot and got it simmering. Little did I know, I was supposed to brown the meat before I put everything else in the pot! HAHA!!

To Die For Blueberry Muffins
Not that this recipe needs another review, but I just had to. These are SO good! I don't use vegetable oil for anything, so subbed that for all butter. Also added 2 cups of thawed blueberries and this was the perfect amount. My batch rose to beautiful heights and made 6 large muffins. I had topping left over, so when I make these again tonight I will decrease that a bit.

Shannon's Smoky Macaroni and Cheese
I was so excited to try this as mac and cheese is one of my favorite things to eat. Add smoked gouda (my fav cheese) and I'm sold! Sadly, this fell short for me. The gouda overpowered everything else. I may try again, but cut back on the gouda and add more of the others. I followed everything exactly except I added a couple shakes of hot sauce instead of the cayenne.

Extreme Chocolate Cake
This cake is amazingly good! I made it for the hubs birthday as he is a LOVER of chocolate cake. I didn't use the frosting recipe as I ran out of time and had to use store bought. However, I didn't change a thing in the cake mix and it is WONDERFUL. I used Droste cocoa powder and I believe it made all the difference. Hershey's is ok in a pinch, but the Dutch processed is where it's at.
