Chicken Pot Pie III

This was easy and delicious! I had cream of chicken soup and used that instead of cream of celery soup and now that's how I'll make it every time. I was concerned about using cream of potato soup but this is really good. Right now I'm trying to keep from eating the whole thing!

Chicken Souiza Cornbread Bake

This is a nice change on a chicken dish. Not sure why they only used part of the can of green chili's. Wish I would have used a whole can - it really needed more flavor and now I have a little bit left over. This dish definitely gets better when reheated. I think I under-baked it a bit the first time, but after reheating in my toaster oven it was better the second time. Like other reviewers I did use 2 real eggs and 1/2 cup sour cream and a can of cream of chicken soup. Next time I'll mix the cheese with the topping and add a jalapeño for a little extra kick.

Annie's Strawberry Dessert

Really nice summertime dessert. I did take some other reviewers advice and made a few changes. I added 1/2 cup sugar to the crust which was perfect. I'm also not a fan of the prepared strawberry topping so I made my own like a strawberry pie with 1 cup water, 1 cup sugar, 4 T. cornstarch - cooked until clear, then added 4 T. strawberry jello. It was very pretty and nice that most of it can be made the day before. I will definitely make again!

Pecan Pie Muffins

These are good, but I just had a pecan pie bread (similar to a banana bread) and it was outstanding. Maybe this needs a little corn syrup. May try to tweek it a bit to make them again. These are better once they are cooled or even refrigerated. Nicely crisp on the outside and soft on the inside.

Easy Chocolate Ice Cream

Wow! This is really sweet! It's basically frozen chocolate whipped cream. It's not terrible, but not that exciting either.

Apple Pecan Cobbler

This was so easy I wasn't sure how good it would be and it is fantastic!!! I will use this recipe any time I have apples I need to use up. Better than apple pie and so easy to make!!!

Easy Beer Bread Mix

Love this conversion to make with regular flour! So easy. And I made this once without the onion powder and Italian seasoning and added a brown sugar/cinnamon topping for a delicious breakfast bread. Also made the regular recipe and added diced roasted red peppers and some garlic seasoning. This made the kitchen smell great and goes perfect with a pasta dish. Yum! I will use this recipe often!!!

Blueberry Sour Cream Pound Cake

Tastes great. I also had to bake for 80 minutes. First time I used the tube pan. What I didn't know was to cool the cake in the pan. I took it out and it totally fell apart. Delicious, but not pretty. I'll know better next time.

Turkey Macaroni Bake

Easy and like others I substituted corn for the mushrooms and also added a frozen veggie combination of celery, onion and green peppers. Added some crispy fried onions on top of the cheese and broiled a couple minutes at the end. Easy and delicious.

Karen A's Chocolate Dump Cake

So easy and delicious! I accidentally mixed in the chocolate chips which of course was great, then decorated the top with some large chocolate chips. I'm going to try this with other flavors and see how it works.

Green Rice II

Used this recipe as a base with a few changes. Used regular rice which I cooked first, had frozen broccoli/cauliflower combination so used that, a little less milk and topped with crispy fried onions. Baked with lid on until last 10 minutes. Turned our great!

Roasted Red Pepper Chicken

Very good and pretty with the red peppers inside the chicken. I lightly pan fried then baked to finish cooking. No need for toothpicks as long as you are careful the first time you flip them in the pan. After that they stayed together nicely. Will make again, but may add a few more spices to give more flavor.

Cranberry Salad IV

This is fantastic. I used the mini marshmallows - much easier than cutting the large ones. I had pineapple tidbits, so I used that instead of crushed and it was great. Will definitely make again. I liked much better than the jello types of cranberry salad. Great to take to a big group - it fills a large bowl.

Hummus III

Wow! Once I found tahini, this was easy and just as good or better than what I've bought at grocery stores or restaurants. Just be sure to keep in food processor long enough to be really smooth. I'll probably never buy hummus again!

Hawaiian Banana Nut Bread

This bread is great! Not sure I'll even make regular banana bread again. I was worried my bananas were a little over ripe, but it turned out perfect. I also used 4 bananas. I made one regular loaf and 3 mini loafs. The mini loafs were done in about 40 minutes.

Fettuccine with Sweet Pepper-Cayenne Sauce

I also added onions with the peppers and served with grilled chicken. Both added a lot. I also used a tomato basil fettuccine and this was a great compliment to the pasta. Don't use a parmeson and romano blend - I tried that and it did not melt well in the sauce. The parmeson worked great. I will make again.
