Fortune Cookies I

I read a LOT of reviews and made adjustments as many suggested. They came out great. After I was all done, I put them on a cookie sheet and put in a 200 oven for 1-1.5hrs to crisp up so they'd "break," also suggested by others.

Tomato Chicken Parmesan

4 stars because I used the most amazing homemade marinara sauce, and it makes everything taste fantastic. (See "Best Marinara Sauce Yet" by Jackie) Honestly the pasta sauce you use will make or break any Italian dish so use the best you can! I pounded the chicken breasts out to 1/2"-3/4" before sauteing so that they cooked evenly and much quicker. I also cut the breasts in half so that the pieces were smaller which was enough for the girls and the guys just took more. The whole family (and the teenaged boyfriends of my daughters) loved it. Use the sauce recipe I referenced!!!!! It's a staple. I don't use anything else.

Fresh Fig Cookies

I second SQUEAKYCHU's rating to a T! These cookies were wonderful! Are you looking for another great recipe for fresh figs? Use Diane's "Figs with Goat Cheese, Pecans and Bacon" (on this site), but read my review for a great tip!

BBQ Country Style Ribs

I have learned to read as many reviews as possible before I try a recipe, and so I opted for the ease of THEFAMILYCHEF1's changes, but I added an extra 1/2 hour to the first round of cooking (because of others' comments) and I kept the meat covered at all times. It came out perfect, perfect, perfect. As with any recipe calling for BBQ sauce, be very picky about the sauce you choose. It'll make or break the dish. I will make this over and over again. Inexpensive meat, , expensive taste, and so incredibly easy. YUM, YUM, YUM.

Texas Stuffed Grilled Burgers

We just loved these! We made them much, much smaller maybe totaling 1/3 pound of beef per burger and of course cooked them for a lot less time because they were thinner. Even at 1/3 pound total they were plenty big! You can cut the filling ingredients in half and still have enough. I used the scaling function and changed it to 2 servings and that fed my family of 5 with leftovers.

Vegetarian Link Gravy

Wowie! What a find! DOUBLE the recipe if you have a family of 4 or more 'cause you'll need it. Not just for breakfast either! I put it on mashed potatoes and my daughter donned her lentil/rice loaf slices with it! Word of warning, do not use any salt until the end. The veggie links have a lot of saltiness to them already. At the point of adding the cooked sausages I put everything in the food processor and blended until smooth (or a lot less chunky) and it was perfectly thick and yummy. This will please even meat eaters! (I used 2-3 Morning Star Sausage Patties).

Best Marinara Sauce Yet

4 stars as written. 5 stars with these hints: triple the garlic & use large cloves, use only 3 T olive oil, add two bay leaves, and start with the most delicious jarred tomatoes - Del Monte Garden Select Petite Diced Tomatoes with Basil, Garlic & Oregano. THIS IS THE ULTIMATE MARINARA WITH MY CHANGES! We mmm and ooh throughout each bite, every time we make it. Fresh parsley is a must. Double the recipe when you make it!

OMG! My husband ate salad!! This got rave reviews from my whole family and for the first time ever my husband ate a salad and went for seconds. To make it a meal by itself I grilled some chicken, sliced it and laid it on the top. Ever so good! I can't wait to make it again!

Pesto Pita Appetizers

YUMMY! I had pita bread, but when I opened the package, it was moldy! Ick. Not wanting to go to the store AGAIN, I instead used flour tortillas and just reduced the baking time to 8 mins. Perfect! This was a favorite with my whole family and guests out of the array of appetizers I had out on football game day! Thanks! So easy too!!

Roasted Vegetables

I just love roasted vegetables, and this recipe didn't disappoint me. Remember though, as with all recipes that call for fresh herbs, if you plan to used dried then halve the amount! This can definitely be added to with all kinds of vegetables, but I really loved the butternut squash and sweet potatoes! If you plan to add more delicate veggies, then I would cook the ingreds in this dish for 10 minutes alone before adding "softer" veggies. Really, really good! It's a great winter side dish!
