Simple Caramel Apple Pork Chops

Reviewed: Oct. 29, 2011
This was awesome, seriously one of the best meals I've made in awhile. I was tempted to lick my plate clean, but I worried that my boyfriend may not find that very attractive :) I did make a few changes...my chops were very thick, so I browned them and removed from the pan. I then added the remaining ingredients(I omitted the pecans and quadrupled the sauce, stirred those together for a few, then added the chops back to the pan, making sure to cover w/ the apples/sauce. I simmered this covered for about 15 minutes, then removed the chops and apples. I thickened the sauce with 1/2T cornstarch mixed with a little water. These are rather sweet so I recommend serving with savory sides to balance things out. I served mine with Stove Top and brussels sprouts.

Fried Green Tomato Sandwich

I've made this many times...if green tomatoes aren't in season, fried zucchini slices work great too!

Easy Morning Glory Muffins

Reviewed: Feb. 2, 2011
These are absolutely delicious. I did make a few changes based on other reviews and personal preference. I reduced the sugar to 1c., and used 1/2 white and 1/2 brown. I replaced 3/4 c. of the oil (I used canola) with pumpkin puree, and 1/2 of the cinnamon for pumpkin pie spice. I subbed cherry flavored Craisins for the raisins, because I just don't do raisins. I omitted the coconut, which probably would have been fabulous in these, but I'm trying to eat as little saturated fat as possible. With these changes, I don't feel so guilty for having already eaten 3 of these, they are that good!

Addictive Sweet Potato Burritos

Reviewed: Jan. 18, 2011
These were different but good. I really didn't see a reason to add water, so I didn't. I halved the soy sauce to cut down on sodium. Also, I just mixed the bean mixture w/ the sweet potatoes before filling.

Fried Mozzarella Cheese Sticks

Reviewed: May 1, 2010
Yummy! I mostly just eyeballed the ingredients. Also, I just cut a block of mozzarella into sticks instead of using string cheese. One thing I discovered...if you make more than one batch, it's very important to give the oil a minute or two between batches to come back up to temperature. The cheese was oozing out before they browned on the 2nd batch, but the 1st and 3rd were perfect. Thanks for the recipe.

Hungarian Goulash I

Reviewed: Feb. 15, 2010
I love this recipe. I have made it a few times now. The last time I made it, I accidentally pulled ground beef out of the freezer instead of the stew meat. I decided to go ahead with the recipe anyways, just browned the ground beef and then added the spices. Instead of serving over egg noodles like usual, I mixed cooked macaroni right into the mixture. Also, i like to top this with a dollop of sour cream. Very yummy!

Asian Orange Chicken

Reviewed: Feb. 15, 2010
I thought the sauce was quite bland. I ended up adding extra soy sauce and some rooster sauce to my serving, and it was much better. I might make this again, but sub something else for the water.

Swiss Cheese Potato Pancakes

Reviewed: Feb. 15, 2010
These were very tasty, although I did adjust the recipe just a tad, based on what I had on hand. I used chive and onion cream cheese and cheddar instead of swiss. I just eyeballed the onion and cheese, so I probably ended up using double of each. I made a sauce of sour cream, blue cheese dressing, and horseradish to serve on top, which complimented them nicely.

Raspberry and Almond Shortbread Thumbprints

Reviewed: Dec. 22, 2009
Sorry, but these just didn't work for me. Even after chilling the dough, they still spread like crazy. The flavor was good, but the finished product wasn't something that I would serve to company.

Spinach Cheese Ball

Reviewed: Dec. 22, 2009
This was the hit of the party! I left out the water chestnuts (personal preference) and instead of rolling in nuts, I molded it into a wreath.

Baja Sauce

Reviewed: Feb. 6, 2009
Love this recipe! I don't totally puree the pepper mixture, I just mix enough so that it is super finely chopped. Since there is so much pepper mixture left over, after I scoop out the amount needed for the sauce, I add more onion, some fresh garlic, and some cilantro and process again. Add to chopped tomatoes w/ some lime juice. Now I have baja sauce and pico de gallo!

Coconut Shrimp I

Seriously, I feel like a rock star when I make this!!!! I've made it a few times now, and everyone just raves about it! I do also make the dipping sauce that a few other reviewers have suggested...1/2c. orange marmalade, 2T dijon mustard, and 1T horseradish. Awesome recipe!!!

Crab Stuffed Flounder

Reviewed: May 7, 2008
This dish looked awesome!!! And it was easy enough to serve on a Wednesday night! I followed a few reviewers suggestions to add some Old Bay and extra worchestershire sauce, but I found it a little salty for my taste. I'm sure that when I try the recipe as written it will be perfect!

Quick Brussels and Bacon

Reviewed: May 7, 2008
This did turn out pretty tasty, although I did change it up a bit. I halved the bacon, and I just used the bacon grease instead of the olive oil. I also added a clove of garlic....Honestly, I can't cook without it :)

So good! The only problem was that we almost didn't get to make the actual sandwiches because we couldn't stop picking at the meat! Thanks for a great recipe!

Cake Balls

Reviewed: Mar. 18, 2008
These tasted great. The first dozen or so that I dipped came out great, but by the end, they started to look a little funky because the dip was filled with cake crumbs. Also, I used 18 oz. of white chocolate, and that barely covered half of them. But i'm sure I will try this again!

Cantaloupe Bread with Praline Glaze

Reviewed: Mar. 13, 2008
I stumbled upon this recipe while looking for something to use up some cantaloupe. I have to say I was skeptical at first. I had never heard of making bread w/ cantaloupe before, but I'm so glad I tried. It is surprisingly good. I didn't make the glaze, and I don't think it really needs it. I will definitely make this again!

These were quite yummy, not to mention quick and easy! The only change I made was to use frozen green beans, which seemed to work just fine. N*R

Tzatziki Sauce I

Pretty good. I did make a few changes. I drained the yogurt for a few hours to thicken it, and I added a cucumber, shredded and squeezed dry. I will probably make this again.
