This was REALLY good! Much better than it sounds. It sounded a little plain, so I added sliced black olives and some leftover corn and served it over brown rice. Real comfort food! Will definitely make this again!

Grilled Eggplant, Tomato and Goat Cheese

We didn't care much for this dish. It was too hot to go outside and fire up the grill, so I did them in the oven. I think the grill would have added a better flavor so I'll try it again on the grill before I decide for sure if I'll be keeping this recipe.

Parmesan Artichoke Casserole

I made this to eat as a side dish and it had too strong a flavor. It may be better if used as a dip. Wouldn't make it again.

Kielbasa and Veggies

This is a really nice way to use kielbasa! I followed the recipe except that I added a LOT more frozen veggies...two 14oz. bags of broccoli, carrots, snow peas, water chestnuts. Used red potatoes. We both really liked this dish!

Get a Husband Brunswick Stew

Loved it! Used leftover pork loin from the crock pot, stew beef instead of ground, and cubed boneless chicken breast. Added some Rotel tomatoes (instead of hot sauce) and used frozen corn and baby lima beans. WONDERFUL STEW!

Tangy Cucumber and Avocado Salad

I loved this salad except for the cilantro. Instead, I used Tony's creole seasoning and didn't add the garlic or pepper. After reading the reviews I decided to chill the avacados before cutting them up. To minimize the need to stir I layered cucumbers, a sprinkling of Tony's, halved grape tomatoes, more Tony's, onion and avacado, Tony's, then squeezed on the lime and lemon. It only took a light toss to thoroughly mix it and the avacados didn't get mushy. My husband is not crazy about avacados, but he loved this salad!

Baked Spaghetti Squash with Beef and Veggies

I try to eat low-carb as much as possible, so I've tried a lot of shaghetti squash recipes. This is the only shaghetti squash recipe that I really enjoyed as much as pasta! I'll be making this again and again!

Pleasant Pork Chops

These pork chops were pleasant enough, but I would definitely cut back on the paprika next time. I used very thick boneless chops and they were very tender. I would also use more broth next time because there wasn't enough sauce.
