OK, I tried them as stated and they work without fail. Working in the food industry I have come across many different versions of this recipe. This is how the big name restaurants make theirs honestly! Freezing the cheese works well about the time it is cooked on the outside it is warmed through. Also the method is flour first, then egg, then crumbs. and get creative! For gods sake use any type of cheese that make you happy, and as far as crumbs use any type of (stale) bread you like and toss it in the processor! Add spices you like, and serve it with any sauce you think will work. It is food not plutonium! It don't bite and you get to eat the mistakes! How much better can it get?
