Fresh Fig Cake

I never make cakes from scratch, but because I had some fresh figs that needed to be used ASAP I searched for an easy recipe and this is the one I thought sounded easy enough & good tasting....I picked the right one. Didn't have any round cake pans so I used 9X13 glass pan. Baked the same amount of time and came out great. Poked holes in the top of baked cake and then spread the sauce on top. I did add 1/4 cup of walnuts to the top of cake before I put in oven to bake. Very tasty and not to overly sweet. Also used "french vanilla" flavored frozen whipped topping to serve. My husband and I both agreed that this is a keeper recipe.

Roasted Tomato Salsa I

Mmmmm...I just finished making this salsa & it is delicious, I hope I have some left for my husband when he gets home ; ) I didn't have my veggies close enough to the broiler so it took a while longer to roast. Will make this again. Like most people I did tweak it a little. We have a smoker/griller and I am going to use it for my tomatoes next time to see how much more flavor this recipe will have. I baked cut up tortillas for chips...very good with this salsa. My first review on this site, thank you to all of you that put up your recipes I have used many of them.

Mom's Brazil Nut Fruitcake

I have had this recipe since the early 90's, a friends mother (could it be the same mom?) made this for Christmas & my husband & I like it so much I got the recipe from her. I have been making it almost every Christmas since. It isn't your "ususal" fruitcake. Love the nuts, the dates and maraschino cherries together. I have frozen it before for a month or so and it was even more moist than after you bake it. If you like fruitcake a little bit, I think you will like this the best. I am headed to my kitchen to make it after I finish this review. :-)
