Toddler Muffins

These were moist and fluffy -- but too salty for my liking. I think the salt could easily be halved in this recipe. I used 6oz of pureed squash and about a cup of chopped steamed carrots (I was using up our existing stash of freezer baby food) with mashed bananas. Baby boy was interested for a few minutes, so that's always a win.

Janet's Rich Banana Bread

This is a great recipe and I've added my own touches over the years. Definitely mash the bananas instead of slicing. If I don't have sour cream, my homemade yogurt works just as well. Depending on how I feel, I'll also add nutmeg, cinnamon and cloves. It's so moist and delish -- a family favourite!

Six Can Chicken Tortilla Soup

This recipe is quick and easy and while it's not my favourite soup, I keep it on the rotation because everyone will eat it. I use rotisserie chicken and frozen corn. I also add fresh garlic, cayenne pepper, and one can of cream of chicken soup in addition to one of broth. It's not fancy, but it'll do!

Chicken Pot Pie IX

This recipe is a treasured favourite. The only thing I do differently is to cook the veggies and chicken in broth and then use that broth for my sauce. I also add some garlic spice to the filling and increase the liquid. I eyeball the liquid because doubling it makes it very runny, while the original recipe is a bit dry for my liking. I use frozen puff pastry and bake the bottome for 5-10 minutes before pouring in the liquid and adding the crust. Delish and so quick!!

Chicken Breasts with Balsamic Vinegar and Garlic

This recipe is delicious and I've made it several times now. Definitely the kind of dish that gets raves at a dinner party. I think there needs to be more empasis in the original recipe on how to make the sauce at the end thick and creamy, savoury -- so I deviate from the recipe a bit there, similar to a restaurant favourite of mine. It comes a close second!

Absolutely the Best Chocolate Chip Cookies

I've always used Mexican vanilla in my cookies, but it must be this particular combination of ingredients that did the trick. These are the cookies for which I've been looking for years! Chewy and soft and so moist! I took them to a party last night and they were a HUGE HIT! I followed the recipe to the tiniest detail. Thanks :)

Slow Cooker Beef Stew IV

This recipe is incredible! I'm glad I took time to read through the reviews. In the end, I added some extra seasoning in the flour mixture, extra garlic, and beef stock instead of water. The deglazing is really what makes the flavour in this recipe. I cooked it on high for five hours and it was falling apart and so tender. Awesome! I didn't need to thicken the recipe at the end either; it turned out just fine!
