Grandma's Tomato Soup

Hmmm - magic! never thought you could take plain ol'tomato juice and turn it into something that tastes like but is better (health-wise) than canned tomato soup - AND SO EASY................... Dropped it from 2 to 1 TBSP of sugar and used more water (as I cooked noodles in soup rather than prior in water).

Panzanella Panini

Memorable!...........only change was to add a couple of slices of deli turkey meat, thinly sliced. Accompanied this with delicious, ice-cold micro-brewry beer (dark stout). Used 2 cast iron skillets (one on burner with sandwiches in it - other pressing down to get that 'thin' look.

It's Chili by George!!

Very, very good. Followed recipe (almost) using a slow cooker. Couldn't find Pinto so only used Red Kidney beans. Instead of chili powder, used Mexican hot Jalapeno sauce. 2nd try - Used Dutch oven on stove. Used Kidney - still can't find Pinto so I used Roma beans. Substituted diced tomato instead of tomato juice. Doubled spices and again used Mexican hot sauce, (limited) - EXCELLENT!!!!!! Tried it again - this time on the stove. Again, no Pinto availabale so I used cans of Lentils and Red Kidney. Used a small can of diced tomatos instead of tomato juice (along with some ketchup & salsa). Used brown sugar instead of white. Went easy on the spices. Served it up with shredded cheddar and fritos topping - even better than the first time - It's now a 5* !!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Only changes were in using real ginger and less of the hot stuff. I couldn't do the Tenderloins on the grill cause it was 0 degrees outside. Sauced them and did them in a pan in the oven at 425 F for 10 min, then flipped em' and added more of the sauce. Made the mistake of just using the olive oil spray - should have used foil on the pan - the sauce that slipped off the tenderloins really burned to the pan. Had to cook a little longer to get them medium (another 5-8 min).

Stir Fried Sesame Vegetables with Rice

My girlfriend gave this dish a "7*" AND I had forgotten to buy the sesame seeds to boot! Only other thing I changed was to use teriyaki sauce instead of soya. Never had asperagus in a stir-fry - normally not crazy about asperagus, but in this dish, it was very tasty. Can use this recipe with other veggies as well as marinated beef, pork, chicken.

Hummus and Prosciutto Wrap

My girlfriend says it's the best wrap she's had & gives it a '5' - I give it a '4'. For sure, the proscuitto tastes better cooked up over raw. Overall, a very tasty (love hummus) and easy to prep wrap.

Mexican Casserole

Alfredo Light

Minor changes: heated butter and sauteed onion and garlic. Whisked 3 tbsp melted butter with 3 tbsp flour in a saucepan. Once I had a roux, I added the milk, chicken broth, and salt/pepper. Along with the parmasan, I added a dash of powdered mustard, garlic powder and Italian spice.

Texas Jambalaya

We loved it! Used brown rice (healthy!). Found that pouring in tomatoes with liquid from the can resulted in a lot of liquid in the recipe. Liquid never really absorbed. Next time, might drain can (of tomatoes) first.

Awesome Honey Pecan Pork Chops

The dish was FANTASTIC. Take seriously the warning not to overcook the sauce - I just left the skillet on warm for a while while I prepped the rest of the meal - the sauce was the consistancy of candy after I put it on the chops. Would suggest prepping the sauce >>immediately before

Hamburger Steak with Onions and Gravy

Absolutely loved this version of Hamburg Steak. I think the key is the gravy - I doubled the amount - the flavor was GREAT! Served up with white rice is a unique change from the standard fries or mash. Highly recommended! Tried it again 3 yrs later - still a 5*. The sherry adds that special touch. best Hamburg steak I've ever had!

Czech Roast Pork

Followed the recipe exactly. Was unable to 'slice' the pork - kind of 'fell apart' as I tried to slice. Maybe my knife blade wasn't sharp enough. The sauce definitely made this a 5* - absolutely fabulous taste to the gravy. The pork wasn't bad either - might add more caraway next time - could barely taste it.

Baked Apricot Chicken

EXCELLENT!!!!!! - among the best chicken dishes I've ever had! So easy - the combination of the sweetness from the apricot jam with the unique taste of the onion soup mix is made in heaven. Inexpensive chicken thighs are perfect for this dish. Served with (box) chicken stuffing mixed with sliced, cooked breakfast (pork & Beef) sausages.

I love southern fried chicken and this easily comes in a great second - without the calories. Followed the recipe using whatever stuffing at hand (chicken). Wouldn't change a thing.
