Panzanella Panini

Memorable!...........only change was to add a couple of slices of deli turkey meat, thinly sliced. Accompanied this with delicious, ice-cold micro-brewry beer (dark stout). Used 2 cast iron skillets (one on burner with sandwiches in it - other pressing down to get that 'thin' look.

Spinach, Red Lentil, and Bean Curry

Man, best curry dish I've ever had - it was deeeeelicious! Only mod was to use yellow lentils out of a can and Garam Tikka instead of Garam Marsala, (all I could find in store). Served on white rice...nice....

Garbanzo Tomato Pasta Soup

Followed recipe other than I used pasta I had at the time. As well, did not use liquid from Tomato tin. Doubled amount of herbs. Think that left-over will have more flavour...

Shepherd's Pie VI

Interesting, my girlfriend found it needed something added (salt?) to add to the taste. I on the other hand found this to be the tastiest shepard's pie I've ever had - I'm sure it's because of the Worstershire & (probably) the brown gravy. HIGHLY recommended!!!

German Spaetzle Dumplings

Not too crazy about these. Had them with Jagerschnitzel. Used the 'ziplock bag with holes poked in' method to make the 'mini- dumplings'. Note: poke holes >> at bottom

Jagerschnitzel

My fault for the 3* rating - could have been a 4.5*. Ate this with Spaetzle Dumplings. Didn't change anything. Chops were definitely too large - heck of a time trying to flatten them. Result: they were too thick and didn't 'brown' and cook well at the same time, (outside too cooked/inside not cooked well enough - lesson learned! - don't get thick chops!! Very filling and tasty meal - gravy is to die for.

Slow Cooker Beef Stew III

Quite good but not "Great!". Followed recipe but used beef boullion instead of water. Even though I cooked on low all nite/all day, meat was not as tender as I thought it would be, (a little 'stringy-tough'). Others liked it more than I.

It's Chili by George!!

Very, very good. Followed recipe (almost) using a slow cooker. Couldn't find Pinto so only used Red Kidney beans. Instead of chili powder, used Mexican hot Jalapeno sauce. 2nd try - Used Dutch oven on stove. Used Kidney - still can't find Pinto so I used Roma beans. Substituted diced tomato instead of tomato juice. Doubled spices and again used Mexican hot sauce, (limited) - EXCELLENT!!!!!! Tried it again - this time on the stove. Again, no Pinto availabale so I used cans of Lentils and Red Kidney. Used a small can of diced tomatos instead of tomato juice (along with some ketchup & salsa). Used brown sugar instead of white. Went easy on the spices. Served it up with shredded cheddar and fritos topping - even better than the first time - It's now a 5* !!

Moroccan Chicken Sann

Followed the recipe exactly to the letter. Produced a lovely, exotic taste, (marinated 24 hrs). Could have been a '5' but I blew it by: not having a tight-fitting lid on the skillet and cooking too long - sauce was cooked off by the time I served..

Grandma's Tomato Soup

Hmmm - magic! never thought you could take plain ol'tomato juice and turn it into something that tastes like but is better (health-wise) than canned tomato soup - AND SO EASY................... Dropped it from 2 to 1 TBSP of sugar and used more water (as I cooked noodles in soup rather than prior in water).

Cumin Turkey Burgers

Followed recipe for 3 burgers. Used canned mild green chiles instead of jalapeno as we have a hard time with 'really spicy'. Did the burgers in a skillet on the oven (no gas for BBQ). Put them in a new bun (almost flat like flatbread) Very tasty - would definitely do again.

Baby Greens and Goat Cheese Wrap

A healthy, flavorful, light dish. Followed the recipe exactly. Did the red peppers, (lightly oiled with olive oil) under the broiler before chopping. Overall, the recipe was very easy to do. Highly recommended!

Homemade Black Bean Veggie Burgers

Girlfriend loved them...I kind of compared the taste to that of the veggie burgers found at a well-known Burger franchise - and found them missing a bit. Overall though - given the health aspect vs beef burgers - they were GREAT!

Farmer's Market Vegetarian Quesadillas

Wasn't looking forward to chopping up a lot of veggies and then cooking up the Quesadillas without ANY spicing.....so I loaded up on a veggie spice mix. Found the combination of the cheese with the spices to be very flavourful! Don't think I'd try this without any spices.

Orzo and Tomato Salad with Feta Cheese

Not bad......used black pitted olives. Found it to be not too tasty, (lacked a bit). Great light meal. 16 yr old found that there was too much 'green'in it (the dill/parsley). Don't know that I'd make it again.

Chicken Quesadillas

Followed the recipe exactly. Only change was to brush olive oil onto the tacos before putting them in the oven. They were great.Believe it or not, I think they're even better as left-overs.
