Cheesy Beef Nachos

Among the best nachos I've had. Only change was to drop the jalapeno (don't like spicy) and the guacamole (too $$). Will definitely do this one again! - with margaritas!!

Mini Meatloaves

Very nice...unfortunately forgot to spread sauce on the meatloaves prior to oven. Only remembered near end - did it then. Regardless, they tasted great. Great with mashed potatos and green/yellow beans.

Thai Curry Chicken and Rice

Followed recipe exactly as stated - for 12. Came out beautifully - orginally wanted a standard curry (yellow?) dish but this was GOOD. The green curry paste lent a unique but not over-powering flavour to the dish. Served up on white rice - got lots of compliments.

Pasta Pomodoro

Healthy, tasty & healthy. Used 'brown' pasta, real roma tomatoes chopped up, 8 cloves of garlic minced & low fat mozzarella - along with rest of ingredients. Oh yeah, 1/2 chicken broth - 1/2 white wine. Mmmmmmm...

Barbecued Pot Roast

Very nice Pot Roast. Made an awful lot of gravy - probably 3x more than needed. Sliced potatoes up and put them in the Dutch Oven with the rest.

Meatball Nirvana

Girlfriend gave it a 6*!. I found it to be a little dry -possibly because I used 'extra-lean'. Next time, I might use my standard 'medium' ground beef and possibly not cook for the entire 25 min - knock it down to 20 min

Old Settlers' Baked Beans

Wow, what a dish! Followed the recipe with following exceptions: followed others' suggestion to cook up the bacon separately. Couldn't find "White Northern" beans so I used "Roma" - they were great. Did it in the Crock Pot over 4hrs on low. Used x2 cans of baked beans with molasas. Used 1 TBSP of molasas instead of white sugar. ALMOST as good as my ol' man's home baked beans from scratch!

Slow Cooker Vegetable Soup

Did the dish while at work so I had to put it on 'Low" for 11 hrs. Barely any liquid when I got home - had to add two cups. Added the frozen veggies but couldn't wait another 2 hrs so I served it up after 1 hr. Found it to be a little too watery and the frozen veggies still a little under cooked. Net result - dish not good beyond recommended cook time, (better on the weekend).

Baked Lemon Chicken with Mushroom Sauce

Wonderful! Followed suggestion to marinate in a bag with olive oil, lemon juice, poultry spice, italian seasoning, thyme, salt, pepper, garlic powder. Left 24 hrs in fridge. Baked them for 40 min with a couple of min. on Broil after to brown them. Only thing I might do next time is to score the breasts with a knife to soak up the marinade better.

Hong Kong Sweet and Sour Pork

Beeeuatiful dish! Couple of changes - added bean sprouts to bring up the veggie level. Doubled the sauce but found that it was not necessary - next time I won't. Used corn starch. The pork was sooo good! Takes a little time to prep/cook the pork but was well worth it.

Baked Teriyaki Chicken

Very, very tasty dish. Doubled the sauce - probably was not necessary. Used brown sugar instead of white. Baked at 375F, 30 min covered in foil, 15 min not. - came out perfectly.

Cajun Chicken Club

Couldn't find creamy parmasan - used creamy Italian. Relatively easy to assemble. Not too impressive to eat. Don't know that I'd do it again.

Mom's Stovetop Pork Ribs

Don't know that this is my favorite method to cook up ribs. Number 1 is the length of time to boil off the stock. On med it took more like 60-90 min. In the end, had to put it on highest temp and then dump out the remainder of the liquid. Flavour was good, tenderness was ok - just not as good as oven or slow cooker.

Easy Cajun Jambalaya

Had some leftover sausages so I used them. Everything else in the recipe left the same except for not using the cayenne and just a few drops of hot sauce. Filling, tasty dish. Even with minimal hot spices, sure warmed us up on a cold winter nite.

Skillet Pork Chops with Potatoes and Onion

WOW!!!! - loved it!!! Didn't change anything other than slicing up a bag of small (new potato size/yellow flesh types). What flavour..... Served up with those little Pepperidge Farm Veggie pies.
