New Orleans Corn Bisque with Smoked Sausage

Probably the best bisque I've ever had. Made no changes to the recipe. Served with shredded cheddar cheese. Had a green salad and toasted garlic bread on the side. WONDERFUL!!

Thai Chicken Pizza

minor changes based on what I had/could find: used marinated chicken breast (tomato pesto). used at hand shredded cheese: cheddar, parmasan. Wonderful dish - unique flavoring - so different from the standard 'Italian' pizza - will definitely do again!

Maple Salmon

Not crazy about salmon - did it mainly for the health benefits. The maple syrup (not a cheap $$ ingredient) gave it the best (read: sweet) flavoring it could have. Overall, a good tasty dish (for fish).

Brown Sugar Meatloaf

Amazing how ratings can be different - my girlfriend gave it a "7*", I was a little less enthusiastic with a "4*" - I just didn't find the taste/texture really any different from other meatloafs I've tried. Changes I made based on others' input: 1/4 c brown sugar, added 1 Tbsp Worstershire to ketchup/brown sugar mix. 1/2 C milk & 1 egg. Added 4 cloves of garlic to meat mixture. Chopped some celery into it. Added bread crumbs instead of crackers. Made mini-loves in muffin pan. Put sauce >on top

Pesto Chicken

No.........don't think so. Seemed to be a neat idea for a unique dish...but...found the chicken to be a little dry and the pesto didn't do much to bring that basil flavour to the breast. The proscuitto just got hard during the cooking process - 25 min. Feedback from my 17 yr old son a day later - HE LOVED IT!! WANTS MORE ASAP!! Got great comments when girlfriend used it sliced up in a salad - changing from a '3*' to a '4*'.

Veal Roast Blanquette

Minor change - roasted veal in a bit of olive oil and diced garlic in the Dutch Oven. Pretty well followed the recipe for the rest. Taste was ok, but the gravy was a disappointment - expected so much more flavour. Essentially everything was boiled - not crazy about boiled meat/vegetables.

Mushroom Salisbury Steak

Like most, I changed the recipe based on others' input. Seasoned the beef with Montreal Steak spice. Sauteed the patties in a bit of olive oil to brown. Added sliced fresh shrooms once I'd flipped the patties over. Used beef stock instead of consomme. Simmered all together for aprox 20 min, (covered). Probably needs more than 2 TBSP of cornstarch as the gravy wasn't quite thick enough.

Beef Noodle Soup

Followed recipe with the exception of seasoning meat with: seasoned salt, pepper, celery salt & onion powder before sauteeing with onion (no celery available). Used 2 cups beef broth instead of water. Added a can (rinsed) of mixed beans for healthy addition. Used dried noodles...Good, healthy, hearty meal.

Mini Cheeseburgers

Girlfriend said these were the "best" burgers she'd ever had....wow, they were good but - . I followed the recipe exactly but while forming the meat into balls, I noted that it was very 'wet' (from the egg). I put some dried bread crumbs in to make them easier to form. This may have been a mistake as I noted while eating the 'dryness' that the crumbs brought to the burgers. Next time, I won't add dry crumbs, (maybe torn up bread). I used dinner buns which were the perfect size for these min cheeseburgers.

Stir-Fry Pork with Ginger

Found this to be a wonderful dish - especially the pork... I found a marinated pork tenderloin and used it in the recipe. Used all of the recipe ingredients to cook up the pork. Only had cooking wine so I used that instead of Chinese rice wine. Added 1/2 of a bag of frozen Oriental veggies to the mix in the wok. Served on rice - NICE....

Thyme-Rubbed Steaks with Sauteed Mushrooms

Followed the recipe with the following exception. After frying the steaks in the skillet, I took them out and did the onion, mushrooms, red wine to deglaze the goodies left in the skillet from the fying of the steaks. Kept the steaks on a plate to warm in the oven until I was ready to serve them with this fantastic topping. Served with boiled carrot and mash potatoes.

Crabmeat and Corn Soup

Very, very tasty soup. Used immitation crab meat and it worked fine. Only thing I noted was that there wasn't enough liquid - therefore I doubled the amount of whole milk.

Beef Stew VI

Perfect Beef stew - made the following changes: put 1/4 c. flour, tsp garlic powder, tsp onion powder, 1/2 rsp pepper in a bag - threw in cubes and shook. Seared the cubes in a dutch oven - after searing - along with beef bouillon, put in 1/2 c. red wine. Put more veggies in than called for. Added more bouillon around 1 1/2 hrs into simmer. Added 1 tbsp each of ketchiup, A-1 & Worstershire during simmer. Only change would be for me to simmer total of 2.5 hrs as I found veggies still a little undercooked after 2 hrs.

Sherry Apple Pork Chops

I must be on a lucky string - I'm choosing 5* recipes these days. This one is a 'keeper' - the combination of the apple/cinnamon/butter/sherry is a flavour that defies description. So easy to put together! Would be proud to serve for guests coming over...

Baked Apricot Chicken

EXCELLENT!!!!!! - among the best chicken dishes I've ever had! So easy - the combination of the sweetness from the apricot jam with the unique taste of the onion soup mix is made in heaven. Inexpensive chicken thighs are perfect for this dish. Served with (box) chicken stuffing mixed with sliced, cooked breakfast (pork & Beef) sausages.

Awesome Honey Pecan Pork Chops

The dish was FANTASTIC. Take seriously the warning not to overcook the sauce - I just left the skillet on warm for a while while I prepped the rest of the meal - the sauce was the consistancy of candy after I put it on the chops. Would suggest prepping the sauce >>immediately before

Czech Roast Pork

Followed the recipe exactly. Was unable to 'slice' the pork - kind of 'fell apart' as I tried to slice. Maybe my knife blade wasn't sharp enough. The sauce definitely made this a 5* - absolutely fabulous taste to the gravy. The pork wasn't bad either - might add more caraway next time - could barely taste it.
