Lasagna Toss

Reviewed: Apr. 28, 2009
Very simple to assemble - got positive comments from the crew. Only change was to go 1/2 Italian sausage meat, 1/2 ground beef.

Baked French Fries I

Reviewed: Apr. 15, 2009
Better than frozen - more healthy than fried - mixed in 1 sweet potato with regular ones. Lowered temp a bit and did them a little longer. They were good.

Candied Salmon

Reviewed: Apr. 15, 2009
Doesn't help that I don't like fish - did it for my son who does like salmon and for the omega-3. He didn't make any positive comments about it. Overall, ok.

Stir Fried Sesame Vegetables with Rice

Reviewed: Apr. 7, 2009
My girlfriend gave this dish a "7*" AND I had forgotten to buy the sesame seeds to boot! Only other thing I changed was to use teriyaki sauce instead of soya. Never had asperagus in a stir-fry - normally not crazy about asperagus, but in this dish, it was very tasty. Can use this recipe with other veggies as well as marinated beef, pork, chicken.

Broccoli and Cauliflower Casserole

Reviewed: Mar. 17, 2009
Did some changes based on other's comments. Sauteed x2 diced garlic cloves with onion. Used low fat/sodium cream of chicken soup, cut butter down to 1/4, increased rice to 1 C. & mixed soup with milk before adding. As well, did not use "processed cheese food" - is that Cheez-Whiz? - used shredded cheddar, mozarella. Very tasty, filling recipe.

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 16, 2009
Would have been a 4*. My oven temperature isn't very dependable. Someone had said lower the temp and cook a little longer so I tried to get the oven to 350 F. and baked the bread a little longer. Neverthe less, at the 50 min mark, I stuck in the toothpick and it came out clean. Bread was done (no uncooked dough), but bread was dryer than it should have been, (crumbled instead of cut by knife). People still commented on how good it >tasted

Fabulous Fried Cabbage

Reviewed: Mar. 16, 2009
Not crazy about cabbage but being a St.Paddy's day meal, I figured given the fact it was "Fried", that it would be better than steamed/boiled. When I noted in the recipe that it wasn't fried, I figured the chicken broth & butter combination would give it great flavour. When I cooked it up and tasted it, turned out to be the same as straight-up ho-hum boiled cabbage - not too impressed.

Special Irish Beef Stew

Reviewed: Mar. 16, 2009
Someone noted that the recipe called for diced garlic but didn't say what to do with it. I sauteed the garlic along with the mushrooms and onion. Had lots of time to cook up the meal so started the stew 4 hrs before eating, (used Guiness draft) and only added the potatoes and carrots 1.5 hr prior to eating (so they wouldn't be over cooked). Got a lot of compliments about the stew.

Grandma's Chicken Noodle Soup

Reviewed: Mar. 10, 2009
One of the best chicken noodle soups I've ever had. Only change was to add frozen carrots & peas during simmering stage. Threw noodles in to broth straight from the package. Did not add much salt as the broth had enough. Found that I had to add broth to get more liquid.

Minced Beef with Black-Eyed Beans

Reviewed: Mar. 5, 2009
Man was this gooood! Unfortunately, my grocery didn't carry exactly what the recipe called for - Garam spice and Black Eyed beans. Had to substitute Garam paste and Fava beans. Nevertheless, the dish was wonderful! I got Nan bread instead of pita and dipped it in the mixture of natural yogurt, salt & pepper, cumin and diced green chile - Wow - what a taste!

Caramelized Baked Chicken

Reviewed: Mar. 3, 2009
Man this was gooooood! Used boneless breast (cut into 3), thigh boneless, & drums. As per someone's suggestion, boiled the sauce and let simmer before pouring on chicken pieces, (makes it thicker). Doubled sauce. Among the best tasting chicken I've had.

Only change made (based on another reviewer) was to use refried beans and I put salsa on top after it came out of the oven. People loved it!

Vietnamese Beef Noodle Soup

Reviewed: Feb. 25, 2009
Tried following the recipe - couldn't find Thai pepper. Used bean sprouts, fresh basil, pepper sauce, lime, green onion - still found it pretty tasteless. Meat, (tenderized top round) was sliced very thin yet still found chewy and slightly undercooked after hot soup poured over it.

Amateur's Light Breeze Chicken Chili

Reviewed: Feb. 24, 2009
Did recipe mods based on another member's review. Used precooked chicken fajita meat (was in my freezer). Sauteed onion, green pepper. Added tomato, beans, mild chile. Sauteed some garlic with chicken - into the pot with the rest added a bit of hot sauce, cumin. Had it with nice fresh bread.

Easy Shepherd's Pie with Garlic Romano Potatoes

Reviewed: Feb. 19, 2009
Good for a Sheperds Pie but not exceptional - possibly my fault. Made a minor change to make it go faster for supper. Used instant potatoes instead of the real thing. As a result, neglected to mix cheese into potato mixture. Added cheese to top during broiling.

Arrabbiata Sauce

Not one of my favorite pasta sauces but did it for girlfriend - one of her favorites. Didn't change recipe and sauce/penne were great. Lowered dose of pepper flakes as neither of us are hot for spicy.

Ian's Potato-Vegetable Soup

Reviewed: Feb. 16, 2009
Very nice soup.......mmmmm served it up with chocolate martinis and chocolate fondue - Valentines day. Overcooked it a bit as potatoes were a little mushy.... nevertheless it was a great soup. Didn't change the recipe a bit.
