Irish Boxty

Never heard of it before - thought I'd try it with this year's St-Paddy's day supper accompanying the Irish stew. I absolutely love potato latkes - this reminded me of them. It was good but lacked what latkes bring - the flavor of onion. Still, they were good - I'd do them again. To minimize burning the outside before the inside is done - it should say in the recipe at what temp to fry them at on the stove. Trial & error on my stove showed 3 min each side on medium (or just under).

Irish Beef Stew

My girlfriend loved it - the others complimented me on it. I, however was not blown away. Although it cooked on low for 8+ hrs - the meat was not as tender as I'd like. I added all sorts of spices to 'taste it up' - still lacking - can't give it a 5*. Don't know that I'd do it again.

Hummus and Prosciutto Wrap

My girlfriend says it's the best wrap she's had & gives it a '5' - I give it a '4'. For sure, the proscuitto tastes better cooked up over raw. Overall, a very tasty (love hummus) and easy to prep wrap.

General Tsao's Chicken II

Excellent!!! - quite labour-intensive but well worth it. Only changes - 5 spice added (cause I love it) and doubled the sauce. Had with Chinese beer....what a meal!

Flank Steak with Horseradish Sauce

To start, BBQ was put away for the season so I used the old iron skillet - super hot to sear and then into the oven 350F to finish. Couldn't find Flank - closest they had was Angus AAA flap (known as Bavette here in Quebec). As far as I know - the two are close (flank/flap). Girlfriend gave it a 10*....I found the horseradish sauce to 'die for' but the meat - way too tough. This may be due to the method (although regular steak done this way is never tough) or the cut - flap = may need much more prep. Next time I'll try to do flank on th BarBee like the recipe calls for.

DEFINITLY A 5*...........BROUGHT IN OFFICE FOR A POT LUCK - COMPLIMENTS AND PEOPLE ASKING FOR THE RECIPE - THE SUGAR + WHITE WINE VINEGAR MAKE THE TASTE DIFFERENCE!

followed it exactly....very, very nice - not greasy (used canola). Wasn't dry even though breasts were kind of thick - in 20 min - they were cooked perfectly..

Mexican Pizza I

Made it as per the recipe. Very nice and unique pizza. The picture suggests there are 2 layers of tortilla so I did one with refried beans and the other on top with the rest of the ingredients.

Lentils and Rice with Fried Onions (Mujadarrah)

Extremely tasty!!! Only change was adding a touch of cumin and cinnamon when adding the salt & pepper. Used Basmati rice. Loved it!!

Slow Cooker Salisbury Steak

Followed recipe exactly. Was very good - flavor, ease of prep. Next time, I might saute up some mushrooms and onion to add to the gravy at the end. Only thing that could improve it.

New Orleans Corn Bisque with Smoked Sausage

Probably the best bisque I've ever had. Made no changes to the recipe. Served with shredded cheddar cheese. Had a green salad and toasted garlic bread on the side. WONDERFUL!!

Thai Chicken Pizza

minor changes based on what I had/could find: used marinated chicken breast (tomato pesto). used at hand shredded cheese: cheddar, parmasan. Wonderful dish - unique flavoring - so different from the standard 'Italian' pizza - will definitely do again!

Maple Salmon

Not crazy about salmon - did it mainly for the health benefits. The maple syrup (not a cheap $$ ingredient) gave it the best (read: sweet) flavoring it could have. Overall, a good tasty dish (for fish).

Brown Sugar Meatloaf

Amazing how ratings can be different - my girlfriend gave it a "7*", I was a little less enthusiastic with a "4*" - I just didn't find the taste/texture really any different from other meatloafs I've tried. Changes I made based on others' input: 1/4 c brown sugar, added 1 Tbsp Worstershire to ketchup/brown sugar mix. 1/2 C milk & 1 egg. Added 4 cloves of garlic to meat mixture. Chopped some celery into it. Added bread crumbs instead of crackers. Made mini-loves in muffin pan. Put sauce >on top
