Prosciutto Parmesan Pasta

Reviewed: Jul. 5, 2007
I made this tonight for my husband and I and it was very delicious. I used diced prosciutto and added a bit of chopped garlic in with it. I also didn't have bow tie pasta so I used seashell and I think it works better than bow tie because the peas and diced prosciutto can fit inside, so yummy!

Antipasto Pasta Salad

Reviewed: Jul. 14, 2006
I loved this dish and my husband loves it even MORE. He requests this dish from me all the time. It's also been a big hit with all my friends. I use whole wheat rotini noodles just because I haven't found whole wheat seashell pasta otherwise I'd use it. I use all salami, no pepperoni and I also use red and yellow bell peppers, no green. Lovely dish! :)

Jamie's Cranberry Spinach Salad

Reviewed: Apr. 19, 2007
This salad is awesome! 5 stars for sure! I went with someone's suggestion of just using Paul Newman's balsamic vinagrette for the dressing to save time and craisins and it was absolutely delicious. My husband and sister-in-law loved it as well. I will make this all the time now. I really liked the sesame seeds. I didn't use the poppy seeds and next time I will add mandarin orange slices.

Taco Dip I

Reviewed: Apr. 21, 2007
I made a few adjustments. I left out the lettuce, bell peppers and tomatoes and instead added vegetarian refried beans (bottom layer), fresh pico de gallo, with fresh avocados as a layer in its own. I did really enjoy the cream cheese mixture with the taco seasoning. I used reduced fat cream cheese and beat it smooth first before beating the sour cream with it. It was really, really yummy. Better the next day in my opinion. I will make it again the same exact way but probably refrigerate for longer before serving. I liked how easy it was. Thanks!

Green Bean Casserole I

Reviewed: Apr. 21, 2007
This was my first time making a green bean casserole but it wont be my last! I did everything as the recipe said but used a whole box of Stove Top and I used fresh green beans as well as a can of green beans. It was good but the fresh ones weren't as soft but it was all very excellent and my husband actually raved about it all night and the following day so I will be definitely making this recipe again. Best part is how easy it is! Might just use canned green beans next time. Thanks a lot!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Jun. 27, 2007
I made this last night and it was a big hit. So yummy! The only changes I really made were adding the whole package of cream cheese after I read another reviewer doing it and I recommend it. I used Classico creamy alfredo and I put everything in the food processor and pulsed it until it was creamy. I would make this dish again.

Grandma Ople's Apple Pie

Reviewed: Aug. 21, 2007
I experimented and made one pie with all Splenda sugar and one with all regular sugar. Some of my friends appreciated the Splenda one. Although there wasn't much difference in taste either way, it was mostly just the appearance that was different. I threw the apple slices in a ziploc bag and tossed them around in cinnamon on both but the non Splenda pie I used Renee's suggestion of adding nutmeg and vanilla extract and apple sauce in the sauce with less butter. All very good suggestions. I brushed some eggwhites on the non splenda pie and sprinkled a tiny amount of sugar on top, very nice touch. I also recommend adding a lot of apples to the pie, it gives it a more classic, rounded out look. I covered the edges of the pie with foil until the last minutes of baking so they wouldn't burn. I liked the baking temp and time on the original recipe better than the way Renee suggested just because the apples came out harder than the what the original temp and time apples come out to be. An overall success and my husband is already telling me this is a household staple and wants more of these pies!

Peppy's Pita Bread

Awesome. Making this all the time now on colder days. They are ridiculously easy to make and this was my very first time making pitas. I might try with wheat bread next time. So tasty!

Real Hummus

Reviewed: Sep. 4, 2007
Delicous! Made this yesterday morning with Peppy's Pita Bread also from this site and it was yummed up during a game of poker with my friends. Got rave reviews from everyone there. I didn't have lemon juice on hand so I substitued with lime juice, gave a little different tang but still worked. Next time I will make sure to have lemon juice. Definitely five star worthy!

Banana Banana Bread

Reviewed: Dec. 15, 2008
This was my first time making banana bread and I was pleasantly surprised at how easy this was to make. I will be making this all winter with my overripe bananas now. I followed the recipe exactly except I really wanted a nut in it and I didn't have any walnuts so I added pistachios (all I had on hand). Walnuts would have been better.. I'm curious about adding spices, I think I'll add nutmeg and cinnamon next time but it certainly doesn't need it. Yum!

Rick's Special Buttercream Frosting

Made this to cover Black Magic Cake and it was perfection. Many compliments on this frosting. I did half Crisco and half butter. Does make a lot. Will probably half the recipe next time.

Best Marinara Sauce Yet

Reviewed: Jul. 18, 2007
I made this last night with some ravioli for my husband and he said it was the best thing he has ever tasted! Changes I made: used crushed tomates, 4 garlic cloves, no parsley, fresh oregano and basil, 1 T sugar, I also added 4 kalamata olives and 4 green olives and pulsed that all in the food processor. That in itself was good but if you like creamier sauces I would suggest adding 1/2 cup part skim ricotta cheese to it - that's what I did and it was amazing!

Fugi Salad

Reviewed: Aug. 31, 2007
I made this as simple as possible because its been so hot here I didn't feel like turning on the stove. I used the broccoli coleslaw mix bag like someone suggested, used raw slivered almonds and didn't toast the sesame seeds, used half a packet of ramen seasoning and didn't add any extra salt, also cut the sugar in half and used some Splenda. Delicious. My husband said I could make this salad anytime and he's picky about his veggies and salads.
