Cofer's Hot Wings

Seasoning the uncooked wings prior to frying isn't necessary but we give a good dose of Nature's Supreme FlavorMate Kentucky Chicken & Poultry Seasoning as well as Tony Chachere's Creole Seasoning just for good measure. The longer you leave the cooked wings in the sauce, the hotter they will get.

Crispy Fried Chicken Wings

While I changed up the spice combination, I kept the 3 cups flour & 1 cup crushed saltines along with the egg & buttermilk soak. Great texture. Nice & crispy on our fresh chicken wings. We used a generous portion of black pepper, salt & Tony Cachere's creole seasoning in ours which was just spicy enough. Cooking time was spot on, too. 10 minutes was perfect. Will use this in the future & am already planning on this breading for chicken livers.

Applesauce Custard Pie

This sounded interesting & I had lots of extra homemade applesauce to work with today so we tried it. Put together exactly as written & the result was a creamy texture with great but subtle flavor. The only note I have to make is on the baking time. I started with 35 minutes at 425 and ended up with the pie in the oven for a full hour to get the filling to set. In the future, I'll treat this as I would the pumpkin pie. High temp for 15 minutes then knock it back to 350 for another 35 to 40 minutes. My applesauce is simply tart apples cooked down with no sugar & run through the food mill. Using the full cup of sugar called for in the recipe was spot on in this case. Thanks for sharing.

Dutch Apple Pie

This was a fun recipe to make. Liked the crust being made from the same crumble used on top. Seemed really thick though in my standard pie plate. Next time, I'll use my deep dish pie plate & I'm sure it'll be just right. When I peeled & diced the apples, I just filled the empty pie plate with as many apples as it took to fill it nice & full. That way, I knew there'd be enough filling to go with the crust. Good flavor but I might add some apple pie spice to the crumble next time. Easy as ... well I guess pie. Thanks for sharing.

Key Lime Pie VII

Wanted something tart & quick & this fit the bill. I beg forgiveness though as I didn't use key lime juice. I used standard ol' bottled lime juice & it was terrific. Using real key lime juice might have been too much for my heart to take. I'm using this same recipe to make a lemon pie right now. Thanks for sharing.

Excellent combination. I added a yellow squash & a zucchini to my roasting pan & it was wonderful. Easy enough to make our own when the local grocery doesn't carry it.
