Ranch Burgers

This is our FAVE burger recipe. I'd rather make it at home than go buy a burger if I could be eating this one. I substitute the fresh chopped onion for 1 T dried minced onion since I don't like too much onion in my food. Just enough to give it flavor.

Cucumber Sunomono

I brought this to a potluck and an Asian friend said it reminded her of the food of her youth. Several people asked me for the recipe. My twist on it is adding 1 T sesame oil and a dash of red pepper flakes. That will up it to 5 stars!

Downeast Maine Pumpkin Bread

Best pumpkin bread ever! I stock up on canned pumpkin in the Fall just so I can make this. Sometimes if I feel fancy, I'll add some walnuts and/or raisins to the dough, too.

Mouth-Watering Stuffed Mushrooms

I used to think stuffed mushrooms required meat. This recipe taught me that they do not. Sometimes simple really is better. Note: I only use half the cream cheese called for. The whole package isn't necessary to fill all of the mushroom caps sufficiently.

Make-Ahead PHILLY Spinach Phyllo Roll-Ups

This was so delicious that my husband and I were going to take it to a potluck and decided to stay home and eat it all for ourselves instead! Flavors are great. Be sure that the phyllo dough is fresh so it doesn't break apart while assembling. We had some leftover in the freezer that didn't do as well the second time we made it.

Naan

Best naan recipe I've found. Better than all the Indian restaurants I've been to, too. These are denser than most and support scoops of food without breaking. I cook these on a cast iron skillet with grill lines (since I don't have a tandoori). I coat on some butter and the minced garlic onto the naan while it is cooking and sprinkle chopped cilantro on top to serve. Absolute perfection!
